The way to gut a rainbow trout is actually quite simple. The first thing you're going to want to do is take a long knife and turn the fish belly up in your hand. Then you're going to want to locate the pee/asshole of the fish, just where the fish starts turning from belly to tail. Then you want to take the knife and start cutting from that hole towards the direction of the fish's head. You want to make sure your cuts are shallow, as to not cut open any of the organs, and the blade is facing away from the top of the fish. I've found that cutting at roughly a 140-150 degree angle allow you to cut the fish the most appropriately. You want to cut up a little bit before the jaw, stopping right around where the front two bottom fins are. The next thing you want to do is to take the bottom jaw and notice that it is actually somewhat modular in its construction, consisting of kind of an outer and inner horseshoe shape. Make an incision on the crease between the two lower jaw parts closer to the gil end of the fish and slide the knife through the other side of its jaw. At this point the knife should be skewered inside the fish's mouth. Slide the knife along the crease towards the nose until the bottom jaw is now in two pieces. This next part is where it gets interesting. So what you want to do is to take one or two fingers (depending on how big of a trout it is) and stick them between the lower jaw sections you just made and into the throat area and pull down and out away from the belly. It doesn't need to be fast, but it should be fairly forcefull, the bigger the fish, the more force you will generally need. If you have done it right, all of the inside organs of the fish will come out in one clean piece. Sometimes you'll even find some eggs! You can cook these parts up and feed them to the dog or something if you don't feel like wasting them. Usually there are predatory birds in the area that would enjoy the innards too if you're worried about the health of your dog. The last thing you have to do is rinse out the inside of the fish and also cut along the spine where there is all that black gunk and try to get as much of that out as possible. Throw some lemon, garlic, olive oil, salt, and pepper on the fish in some tin foil and throw that shit either on the barbecue or the oven, or hell, even the fire. Happy fishin'. This is all of course in the unfortunate event that you were fishing for fishies and happened to accidently catch one.
