If you want to handstand without using your toe stop then I would say the best size/shape would be a ramp would be about a 5 or 6 foot ramp as the curve will help you throw your momentum up. Smaller ramps tend to throw your momentum out so it's easier to have less speed and boost off the toe stop.

So I just rewatched this video and think I realised why I struggle to get enough height despite being able to handstand on the flat (on skates and in shoes), I skate with my right leg forward, but when I handstand, my left leg is forward! Any tips?? Or do I just need to learn to handstand or pump my nondominant way? 😬 I also struggle with the Donkey kick method, and don't seem to have the strength to handstand that way even without skates...

Hmmm. If you don't have the shoulder/arm strength for donkey then maybe trying to lead without your other leg might be the way. But you might also want to try handstand without skates with your right leg as switching your handstand leg might be easier then switching your skating stance?

Yes it is. I have seen many skaters do it with wrist guards. Just be careful that your hand doesn’t slip out when you put pressure on them.

I know a lot of skaters prefer to put their hands on the deck, just past the coping. It means you may need to kick up a little harder.
