I've had a few times where I'm still at war with a nation who has only 1 or 2 provinces but I can't find them. Is there any way to find them easily? I've wait to wait until near endgame before I could see them.

Also another new trick I found, if you're fighting someone and cant get through their defences, send 3 corruption agents to a city they have that's the lowest morale, once it gets under 35% there's a chance insurgents may spawn and take over the city, and destroying some buildings. And of course if you're feeling so inclined, you can also use a bit of gold to drop it down even more

Hi Yes! there is. Just go to setting turn off political mode, and turn off display of units and look for provinces in red, those are the enemy ones

It basically removes them form your games homescreen, and after a long time of being in archived it will fully dissapear
