How do I connect the other end of the strap if I am fitting a single ratchet bracket?

Ok, so you need to fold the lashing strap back at about 4" and hook that inside the bracket, then feed around the chimney and into the racthet. I know the bracket that you're referring to and it's a bit tricky which is why we use the straps with two ratchets.

Is that a metal strap or a nylon strap? & what is the weight capacity of that bracket?

its PET if its the same as connecttecs and has a 6kn rating equivalent to 600kg

might I need a second strap to keep the pole from twisting?

One should be fine unless you have a very large mast, in which case you may need two.
