Hi Jean-Philippe, thank you for the question. We form the pie pieces in a dishing press to match the dish radius of the head they will be fitted up to. Please let us know if you have any other questions!

Usually they make a big flat disc, then stamp the heads using large head forming equipment. That is why heads are usually provided in standard sizes.
