Hi Christella. I heard a long time ago that once finishes or adhesives cure (harden) that they are safe to have food touch. That being said I don't know, the person that I heard that from wasn't a scientist. They make food grade adhesives and sealants. Or there are commercial versions of this brine bucket, I've seen them on Amazon, or at Cabelas.

You can brine in a pot and use a smaller pot full of water on top to hold the food at the bottom

Yes, I have a refrigerator in my garage that a 5 gal bucket will fit in.
