Thank you! I often make soups in the vitamix, just throw in different vegetables and 5 minutes later the soup is done. Even with s much older and less fancy machine. I love cauliflower, I’ll get the ingredients tomorrow and try it out.

Hi Garrett! Gotta save money where we can! Claire in the office loves using canned white beans instead of cashews sometimes. You can get canned Cannellini beans super cheap. All the best with the studies!

I just made this and it turned out great! It was a little much for 1 person, so next time I may go with half of the ingredients. Also, I added 2 cups of water and it came out creamy. I didn’t see if you added water, but without it I had spinning blades at the bottom. But, still a great soup.

Steaming the veg will result in a more traditional soup flavour and added creaminess. It's still soft and creamy though when blended raw! Hope you enjoy it :)

I'm curious about using frozen cauliflower. Would you also cook that beforehand? (Assuming you would thaw it in fridge to avoid cauliflower ice cream in an older Vitamix :-) )

Just make sure that the frozen cauliflower is lightly steamed before hand. You wouldn't need to thaw it though. You're running the machine long enough for it to steam up.

You can also substitute the cashews with White Beans. They have less fat however, still a creamy consistency

Tommy I have the older Vitamix model, 5200, which I don’t think has any bearing on this query. Is there anyway I can reduce the air from the soup. All that blending makes for an aerated soup which isn’t the texture I want. I just want the creamy texture on its own. I think I know the answer, I need to use a hand blender instead of the Vitamix and cook the soup on the stove top. But maybe there’s a Vitamix technique I’m unaware of?

If you thicken it up more with nuts or something creamy like coconut cream or pumpkin this really helps to reduce the aeration. When finished blending turn the speed to low for about 20 seconds which help remove some of the bubbles. Happy Blending!

I don't see why not :) Not too sure on how much to use but I wouldn't use too much as it might make it a really thin consistency. You could also try white beans if you're not into using cashews :) Happy blending !

turned out bland ...to be fair, I omitted the salt and vegetable cube (since that is full of salt) I followed every other step exactly as the recipe and it turned out really bland,tasting like nothing to both me and my father. If you can post a version without ANY salt, It would be awesome tho because you make good soups,but they are sometimes shit without the salt.

Sorry to hear George! It definitely needs the Massel Stock cube to give it a stronger taste and to bring out all the flavours. Maybe try making your own stock and basing the recipe off that? Happy Blending!

If you're on a salt free diet, it takes time for your taste buds to adjust. You might want to try dill, or noutritional yeast for a cheesy flavor, or perhaps something with heat like red pepper flakes. In addition, you'd want to use a salt free veggie stock.

Hi Lisa, we haven't advertised this recipe as a raw soup. We also explain the light steaming at the start of the video. Sorry for any confusion. You can keep it entirely raw though by not steaming the cauliflower however, the taste can be bitter. Happy Blending!
