{How to make: A chicken quesadilla (By Chef Al)}

Chef Al's chicken quesadilla recipe
Ingredients:
- 2 large spinach tortillas
- Mexican cheese (5 cheese blend)
- 2 tbsp cilantro
- 1 1/2 cup mushrooms
- 1 chicken breast
- 4 tbsp sour cream
- 1/2 cup onions (diced) and mushrooms
- 2 cups green chiles
- 1 cup salsa
- Spanish rice (store bought, all prepared)
Procedure:
STEP 1 - Pound out 1 chicken breast in round form of tortilla inside freezer bag, season with chopped cilantro, both sides and salt and pepper, set aside
STEP 2 - Saute mushrooms and onions (same pan as chicken, clarified butter and salt and pepper) set aside
STEP 3 - Spread sour cream on 2 tortillas, put cooked chicken breasts on 1 tortilla, add onion and mushroom, salsa on top of chicken, add cheese on top, put other tortilla on top of the first one and grill both sides at 350 degrees
STEP 4 - Put 1/2 cup cheese and green chiles on top and put in oven at 375 degrees till crispy, cut and enjoy! :)
Serve with Spanish rice, sour cream, and salsa
