Wow Paul, this episode in addition to preparing that exquisite Blueberry Pannacotta recipe, you make it look so easy to do! It stole my attention and I couldn't take my eyes off that beautiful eye color you have and that was reflected in that video, now I understand why they say they are very similar to those of another Paul but Newman, well for me you overcame it! Wow. At first it seemed like a shame to melt down that luscious double cream, but seeing the finished panna cotta yeah it was worth it. Can’t wait to get my own cow! Double cream isn’t a standard product here in Australia. We have thickened cream which is 35% fat and has added carrageenan. I’ve found 2 very expensive brands of double cream that are 50% fat, but they’re not stocked in all supermarkets and even when I did find them they stopped stocking them after a short while. There’s “dollop” cream which looks lovely and thick but when you read the ingredients it’s 35% fat too. Cream, skimmed milk and thickeners. So it’s basically thickened cream with extra carrageenan 🙄 We also don’t have clotted cream. Sad isn’t it. Once I’ve got my cow I’m going to make all of these things!
