Typically, I'm not the biggest fan in the world of soup in general, but chanko actually looks really good. I really want to try it someday, I wonder how many restaurants here in the states serve Chankonabe, And which ones as well

I was inspired to do a 7 strand plait, my first bread ever, and it turned out pretty well! I'll be doing an 8 strand this weekend. Just have to get my dough right, it's a bit rubbery and doesn't roll out quite like it does in your video...

Swap out strong bread flour and butter for SR and cake marge. You’ll get a better texture and leave the tops “cracked”, brush with milk not egg. Finish with Demerara sugar. Much better.

Amazing Roulade, but if when you pull the tray out of the oven to cool, you wrap the first inch around a wooden spoon handle it’s easier to start the roll off when it cools as it’s now curled ready to fill, you then don’t brake its back and get a good spiral 🌀

Can anyone tell me if you don't have a mixer how messy this dough is to knead by hand?

I’m confused! After 10-15 minutes in the mixer, there is no stretch and fold process in this video, yet your book BAKE clearly instructs after said mixer mix, and the first ferment of 8hrs you tip it onto the board and stretch and fold a few times, rotate as you go, and repeat. Turn the dough over and stretch and fold again, ‘repeat several times’.

I, too, have watched/read multiple different sources about how to do sourdough. I have a starter going right now after watching the 3 videos! I'm excited! Sourdough for Christmas if it works!

great job on the video, really loved how you broke down the steps! but honestly, i think scones are a bit overrated. i mean, they’re good and all, but they can be so dry sometimes. what do you all think?

good morning I put together my first ever attempt at sourdough starter using your instructions - 1 to 1 ratio - and my dough was VERY sticky. On this video, yours looked quite firm. should I add more flour for stick to the 1 to 1 ratio?

I really enjoyed the video, Paul! Your tips are super helpful and make baking seem so much easier. But I have to say, I find it hard to believe that anyone can truly achieve the "perfect" scone every time. Isn't part of baking about personal taste and a bit of experimentation?

I beg to differ, using a mixer with a dough hook for 30 minutes isn't "letting nature do it's work". You can make a great sourdough boule without a mixer!
