I was inspired to do a 7 strand plait, my first bread ever, and it turned out pretty well! I'll be doing an 8 strand this weekend. Just have to get my dough right, it's a bit rubbery and doesn't roll out quite like it does in your video...

Swap out strong bread flour and butter for SR and cake marge. You’ll get a better texture and leave the tops “cracked”, brush with milk not egg. Finish with Demerara sugar. Much better.

Amazing Roulade, but if when you pull the tray out of the oven to cool, you wrap the first inch around a wooden spoon handle it’s easier to start the roll off when it cools as it’s now curled ready to fill, you then don’t brake its back and get a good spiral 🌀

I’m confused! After 10-15 minutes in the mixer, there is no stretch and fold process in this video, yet your book BAKE clearly instructs after said mixer mix, and the first ferment of 8hrs you tip it onto the board and stretch and fold a few times, rotate as you go, and repeat. Turn the dough over and stretch and fold again, ‘repeat several times’.

I beg to differ, using a mixer with a dough hook for 30 minutes isn't "letting nature do it's work". You can make a great sourdough boule without a mixer!
