Hi there! Not sure if you figured our your answer or not, but you always want to make sure your fondant isn't dried out, and lightly dust the mat/counter with cornstarch or powered sugar so it doesn't stick and your rolling pin to roll out that way you can keep rolling as thin as you want without the fondant getting dry and cracking on you.
