Fuch ohff no checks were cut before this drink was made; and yes, it’s a rum maid with absinthe. I’ve never hidden behind that fact. If anything it’s a nod to the style of drink that emanated from New York in the early 2000s. Which I have a huge amount of respect for and take an enormous amount of influence from (after all, they say that imitation is the highest form of flattery).

theappe I think it’s a great drink, although it’s not particularly creative, especially in today’s cocktail world. This is more of a classically styled drink with some interesting flavors. Great thing is that it can be made in the bar or at home.

Its a small amount of absinth and plenty of cocktails use that technique, eg the sazerac. Also, many bartenders will let you drink the absinth as they are making your cocktail.
