I believe it was polyblend sanded grout.

Why two coats of mesh.....I use one coat of sticky fiber tape and slurry and the next day one more coat of thin set......works perfect for years of enjoyment

Why the layer of weird grid stuff? Why can't you just grout tiles right to foam?

It is drywall mesh. It adds strength to the piece and also helps the thin-set adhesive stick to the foam.
