Only one set of Stretch & fold? I just started my sourdough journey and this seems to have less steps.

Yes, precisely!! You really don’t need more when starting out. It will still be delicious. Keep it simple so that the process doesn’t become overwhelming. And once you’re more experienced and ready, you can start playing around by adding additional stretching and folds to see the results, but it’s not necessary. ☺️

That’s great to hear! I use a fresh milled combination of organic hard red and white wheat flour. Typically it’s good to start a starter with a whole wheat flour and once it’s ready you can start feeding it with the same flour as you’ll use in your loaf, or continue with whole wheat flour. I always feed mine with whole wheat. Hope that helps! Let me know how it goes!! ☺️

Everything seasoning sounds great too! Some people put theirs in the fridge but I don’t find it’s necessary. ☺️
