Gretchen, that cake looks incredibly delicious! It's funny on how you are showing about cashews and my friend who can't have dairy she doesn't know if she's allergic to cashews or not because I wanted to make her cashew cream cheese and if I would make this for her instead of coconut cream with she can have but if I wanted to use cashews to make a more bulky whipped cream that I want to know that she can have them. I'm going to show her this recipe she's really going to like it!

Looks delicious! Love fruity cakes and love being seasonal so just might have to make this! I have a recipe request, can you try making vegan sfogliatella or lobster tails? I feel like thats something not just anyone could tackle veganizing, but I have hopes that a professional vegan pastry chef could do it!

Hi! Thanks! Any flax meal will do, however I fond that Bob's Red Mill is the easiest to find GOLDEN flax. But any brand will really be fine. I am partial to Earth Balance Vegan Butter, but again any brand would do

Hi, Gretchen! I wonder if this whipped cream isn't going to melt in hot temperatures, like we have here in Brasil (+30°C ). If yes, what would you recommend? Thanks.

HI! I find that Coconut whipped cream is much more stable than cow cream! *Meaning in the fridge it gets MORE Stiff! That said it is still fragile at higher temperatures, but as long as you don't leave it sit in hot temps for more than an hour to 2?? I'd say you are good to go!

Hi, Gretchen. Do you think that vegan whipped cream can be piped into simple decorations like swirls? Could it be used to "ice" the sides of a cake? I want to make a vegan black forest cake. (If it can't be used to ice the sides of the cake, I could always "go naked" -lol- but I'd like to use vegan chocolate to decorate with shards on the sides....) TIA.

Omg get out of my head! I also want to make a Black Forest! I said it just tonight! But, yes the vegan whipped cream is perfect for all of it, and the nice thing is it actually gets BETTER over time (stronger, sturdier) as compared to regular whipped
