RECIPE Yield: 4 servings Prep Time: 10 minutes Cook Time: 15 minutes Ingredients: 1 TBSP vegetable oil 1 head of broccoli 1 onion, sliced 2 cloves garlic, minced 1 carrot, sliced 1 red pepper, sliced Salt and pepper ⅓ cup creamy peanut butter 3 soy sauce packets 2 TBSP rice vinegar 1 honey packet 1 red pepper flake packet ½ cup dry roasted peanuts, chopped 2 scallions, chopped 2 TBSP chopped cilantro 4 cups cooked rice for serving Steps: 1. First prep the broccoli. Cut off the florets into small pieces. Using a vegetable peeler, peel the broccoli stalk to remove the tough outer skin. Slice the broccoli stalk into pieces similar in size to the florets. 2. Heat the oil in a large skillet and add the onion, garlic, broccoli stalks, carrots and red bell pepper. Season with salt and pepper and saute for 5 minutes. Add the broccoli florets and stalks and saute for another 5 minutes, then add a few tablespoons of water and cover, cook for an additional 3-4 minutes until broccoli is bright green and tender but still crisp. 3. Whisk together the peanut butter, soy sauce, rice vinegar, honey and red pepper flakes. Toss the warm stir fry with peanut sauce. Serve over rice garnished with chopped peanuts, cilantro and scallions.

you can also plant some of the usual food waste and regrow - celery - half dead garlic, carrot tops grown amazing greens for salad, all peppers- sweet and chilli, dry the seeds and plant them - grow your own - good luck.... especially if planted in a recycled 1L water bottle - makes a great self watering plant container :)

Additional money saving pro tip: Save seeds from your veggies, let them dry, and try planting them! It won’t work with all veggies, some are engineered NOT to have function able seeds, or to just end have seeds. Your best bet would be organic or non-gmo, but if you’ve got a green thumb you’ll be saving TONS of money in the long run! Happy growing everyone!!

I love broccoli stalks in cashew chicken. Also you can grate the stalk and toss it in a salad or omelet.

Real talk, I went to culinary school and they didn't teach me knife skills this well. They just handed us carrots and told us to not hurt ourselves. So this video is literally more helpful then my culinary classes. Thank you, I'll feel much safer cutting things from now on.

My mom peeled broccoli stems and sliced them in place of water chestnuts in her stir fry. Just like you did!

The end of the stalk is still edible though, you just need to peel it thicker than the upper part. I usually eat all the parts except the outer fibrous skin. Or you can use the peels even more for the veggies stock bank.

We always try to eat the florets ease, but I either dice or slice the stems and throw them in the freezer. Once I have enough... Broccoli and cheese soup!

Do people really not eat their broccoli stems? I’ve been eating them my whole life. We don’t peel it and we still use the end of it. It just takes a few minutes longer to cook than the florets so you have to start cooking the stems first

You had me at peanut sauce!!!!!! I have yet to make my own....this is so simple!! Luckily when we have broccoli growing we eat the green leaves too, they're like collards. Wait to go with the DONT WASTE FOOD!!

Man I've always used the broccoli stems when I made stir fry. Glad to see others out there doing the same thing. It always seemed so wasteful to just throw them away!

I...I didn't know you just needed to peel the stem. 🥺 (That emoji should look less sad and more anime dewy-eyed starstruck) I will still always prefer the florets, because when soaked in sauce they're just delectable. But I'm willing to give those stalks another chance now.

Save the seeds to grow in the garden for a new crop of plants, or exchange at the seed exchange at the library. My public library has one where gardeners exchange seeds.

Don't throw that carrot tip in the stock bucket, COOK IT THEN AND THERE! It's the same texture as the rest of it, treat it accordingly!

adding broccoli to a vegetable stock will actually make it taste, and smell, like a fart, I don't recommend.

Don't put bell pepper stems into stock. They're not edible at all.
