Excellent. A straightforward, no-nonsense, recipe. Advocaat really is an exceptional drink. Excepting time constraints and of course, plain old laziness, if I can make advocaat myself at home, I cannot see why I would ever want to buy another bottle. Thank You very much for posting this video.

this is great. I tried making it and even though I transferred to the ice bath as soon as the temperature hit 140F (thats what other recipes recommended) and also stirred constantly, i found clumps of cooked egg yolk and it was suuuuper thick

I love the thick consistency of it. The only downside is if you spill it on you it tends to stain. Fortunately I was already going to change jackets for the fish and goose soirée

+elh93 There's a lot of good ones in there. The Trafalgar is a 12BB original. It's great. There's also classics like Glögg, Mai Tai, Bumbo, etc. The book is awesome for home enthusiasts. It has party themes and different cocktails for different occasions. They have easy drinks and harder drinks, but everything can be done with a realistic home bar set up. Enjoy!

In the old days in indonesia we made it by simply mixing raw egg yolk with rum. No sugar/salt added

I’m pretty sure you can replace the brandy with maple syrup and apple juice if you want non alcoholic advocaat.

I mean, you COULD. But I'd probably take it easy on the maple syrup. It's going to be pretty sweet already. You don't want to go into diabetic shock. Mix up a batch of the non-alcoholic version. Let me know how it turns out. Cheers!

I'm not a fan of drinking alcohol. This is the only drink I love and have each New Years. No one sells it this year :( Looking at making it myself. Doesn't cooking it lose it's alcohol content?

I've got one or two more I could make. Truthfully, there aren't a whole lot. The Snowball is a famous one, but I was too scared to try it. It didn't sound great to me. The 12 Bottle Bar (amzn.to/2h59DNC) has a couple more Advocaat drinks in their book. The Kindle version is on sale right now for $2. Re: sweeteners. I'm not sure. The only non-sugar sweeteners I typically use are Agave and Honey. Both have a distinct flavor to them and both are pretty viscous. It might be worth a trail run. But, something like crystalline stevia might work texture-wise, but I'm not sure about the favor. If there is a granulated sugar substitute you normally use, maybe give that a go. Sorry, I don't have a great answer for you.

Ok, I'll do some experimentation with artificial sweeteners and report back in a few weeks. Only real reason I'm asking is I was diagnosed with T1 Diabetes over the summer, so regular sugar isn't the best idea.

With splenda, it's not as thick as sugar, and lower volume. The flavor is also wrong, but I think that's from the brandy not the splenda.

Bummer. Yeah, I imagine the flavor might not have been the same. Does it work better when there's more booze, like in the Jack Torrance or the Bombardino-Calimero? I made a batch today with some really bad brandy and it wasn't great on its own, but it was really good in both of those drinks.

The Bombardino-Calimero I made was very good, but more like Irish coffee than I imagined it would taste, and I think after sitting in the fridge for a day it improved.

Wouldn't it be better to add the Brandy after heating the mixture up so the heat won't kill the alcohol? Great recipe though, I'm definetly going to try it out!

akkifakki You can try it, but I think it would be too thick to heat and stir properly. You want to add the brandy to help thin it out. Just be sure to keep it on a lower heat so that you don't burn off the alcohol. You certainly do not want it to boil. Hope that helps. Cheers!

+akkifakki I'm not totally sure what the heating is for, whether for thickening only or for egg-safety purposes. Or both. The eggs are safe at 160 degrees and alcohol doesn't boil until 173, so there's a bit of wiggle room. I'd use a thermometer to keep an eye on it--besides, there's no reason to take the eggs any further than you have to. Personally, if the goal is to get the eggs to 160, I'd get some water simmering in that pot, make a double boiler with the mixing bowl, use a thermometer, and keep it moving with the whisk so the eggs don't scramble. It would be a lot faster.I'm not sure that's what the goal is, though. I think he's just applying heat to get the yolks working their custardy magic, especially since he's using low heat. In that case, the alcohol is a long way from boiling. Safety-wise, eggs aren't nearly as dangerous as people tend to think, assuming you handle them properly and are a healthy, non-pregnant adult. Or you could always use pasteurized.

Plus it's a misconception that much alcohol gets boiled off in any cooking process, burnt off perhaps if it is a flambé however in normal conditions it's a safe bet that 85%, on average, of the alcohol content is still there.

Hung Pham Store it in the fridge and you can safely keep it for a week. I'm not a doctor or a food scientist, so do this at your own risk, but I'm sure it will last a lot longer than that. My most recent batch did. Hope that helps. Cheers!

You can. Other sweeteners will certainly affect the flavor, so keep that in mind, but if you're used to those alternate sweeteners, you'll probably be fine.
