How to make Amaretti Cookies- soft and chewy!
The easiest cookie, 30 min from start to finish!
Dry Ingredients
2 1/2 cups of almond flour
1 cup of granulated sugar
1/4 tsp of baking powder
Wet ingredients
4 large egg whites
1 tsp almond extract
as this is a quick cookie recipe- start by preheating the oven to 350 degrees.
directions
add all dry ingredients to a food processor and mix for a quick min until well combined, then set aside.
with a hand mixer- beat the egg whites with almond extract until doubled in size (about 5 mins)
then add in slowly the egg white mixture to dry mixture and pulse until incorporated ( take your time, we did it in three batches)
once well incorporated your mixture is ready to shape out on a baking sheet.
with your choice of baking sheet- (keep in mind what you are using, you may need a parchment paper- all depending if your pan is non stick or not etc)
you can either pipe or hand roll the mixture into a cookie form.
once done, you can add a topping of choice, (we added dried cherries, roasted almond and sliced almonds) as well as choose to roll them in powdered sugar.
bake for 20 mins at 350 degrees or until light golden! (please check on them as everyones oven may vary).
once baked, leave to cool for 10 mins before removing from tray!
you can freeze these for up to 3 months in ziplocks or freezer safe containers. these cookies are great for any occasion! they are so soft and chewy! not to mention gluten free too!

I used a Silpat. I measured correctly, and found my dough much wetter than yours. I added a bit more almond flour. The cookies are cooling as I type this. They are sticking to the Siplat. Hope they come loose. I folded the 2 & 1/2 cups almond flour in very gently.

Hi Anita 👋🏼 so I had to Google what a Silpat 😂 ok now I know 🫶🏼 yes, the dough is a very sticky dough indeed, but that’s what makes the cookies once baked tender soft 🤞🏼 I hope yours removed easier once fully cooked from your baking mat? You can make them any size you wish, for us we piped or hand rolled about a tablespoons worth 🫶🏼

Ciao Pina, Vi ringraziamo per aver guardato il nostril video. Molto apprezzato 😊 Di seguito e riportata la ricetta in Italiano. (Amaretti Morbidi) Ingredienti secchi: 300 g farina di mandorle 200 g zucchero 1.25 g lievito in polvere Ingredienti umidi: 4 albumi d’uovo grandi 5 ml estratti di mandorla 1) aggungere tutti gli Ingredienti secchi in un robot di cucina, mescolare e metter da parte. 2) Con uno sbattitore elettrico, montane gli albumi con l’estratto di mandorle 3) Con una spatola (in 3 riprese) agguingere delicatamente gli albumi agli ingredienti secchi e frullare a quando non saranno ben incorporati. E un impasto appiccicoso. 4) Formate le vostre forme opure arrotlate nello zucchero a velo. Posigionate i biscotti su una teglia rivestita di carta al forno. 5) Aggiungi i condimenti preferitti (cigliege rosso, verdi o mandorle) e informare in forno preriscaldato a 180 C per 20 minuti. 6) Lasciare raffreddare i biscotti per 10 minuti prima di rimuoverli dalla teglia. Don’t fret, give it a try in a blender for a few seconds of a mix or just folding egg whites into almond flour by hand ❤
