Well, Julia, you sure brought back some fond memories for me tonight! I am 65yo now but was raised by a mother who baked cakes out of our home, when we were kids, to help out financially. We always knew never to run in the house in case mother had cakes in the ovens. And we also knew that the huge cake being constructed in the middle of our huge dining table was NOT to be touched!! I remember mother, before a big cake, sitting and folding her parchment pastry bags the night before. That is all she knew, and she seemed to be fine with that! I recently pulled out all of my mother's decorating "stuff" that I was given when she passed. I am going to try, POSSIBLY, some cookie and cupcake decorating for the holidays. I, too, have found that I like the royal icing WAY better than trying to decorate with American buttercream! I am waiting for my new miser to arrive so I can't start anything yet. Have NO idea how this will go! lol! Sorry to carry on, but thank you for a great video...SO helpful and easy to follow! God bless...

I decorated cookies for the first time a few days before Christmas, and I could only have a couple different colors of icing prepared at a time because I did not have enough metal tips. Using these cones would have made things a lot easier! I love how thorough this video was and how you went nice and slow. It makes it a lot easier to follow along. Can't wait to watch more of your tutorials!

I was taught to bake by my grandmother and she always made her own icing bags from what we call grease proof paper here in the UK. It saves money, adds flexibility and you never have to worry about running out of bags! TY for sharing this, I was very young when I learnt how to do this so a refresher is very welcome :)

Love this video -- I'm such a beginner, this was a huge help! For those struggling with cutting the parchment, I found a quick method to cut a perfect square for 2 right triangles: Take one edge of your parchment roll and fold it over to the other edge, creating a right triangle. Cut along the straight edge created by the fold. You will have a perfect square with a diagonal fold to use as a cutting guide, creating 2 right triangles.

My mother did this with waxed paper. Could remember how. This makes me happy, because I've never been happy with all the piping bags and alternatives.

:) I use Reynolds parchment paper, as I believe it's got a sheer wax coating that keeps it from softening as fast as other parchment paper. The paper also slides easily across itself, making it easier to shape the cones. The tips can get blunt though (the advantage of metal tips is they don't misshape), so I am careful not to touch the tips of the cones.

I really like your idea and will be testing it tonight as I have 45 tea-biscuits (cookies) I have to decorate for Saturday morning. I've never heard of a parchment cone or saw anyone use one until a few min ago! I just watched your chocolate lace cake wrap video and wow, amazing! I had to subscribe and find out how you made this cone. The other day I had to pipe chocolate to make strawberries look like little ladybugs. I used a ziplock bag instead of my disposable pastry bag with tip and it was so frustrating. I also used the plastic squeeze bottles which I do not like much. This method seems far better and I can't wait to try! I do love my disposable bags and tips with frosting but this seems like it will be great for control with melted chocolate. I'm excited I found your channel! Great videos!!

This works perfectly for me. So glad to be (mostly) done with all the tips and bags, which run into quite a bit of expense. I do sometimes store colored icing in twists of plastic wrap so I can just snip off the end of the plastic wrap and pop it into the parchment cone. There's less control for very detailed work but its much faster for kid's cookies and less messy.

LOVE these. Makes cookie decorating fun again. I thought it was great when I found the tip on putting icing in plastic wrap then putting that into a bag - reuse the bag, hardly any mess - it was all good but there was still messing with the bags, the tips, the couplers and I always made too much of one or two colors and had them about. Also, those darned 00 and 1 tips clogged all the time so I'd pull the tip off and put another on - more to wash and keep track of. I guess I'm just really a lazy baker, ha, but I absolutely love the ease of making them, filling them, using them and tossing them! Thank you so much!

What a good idea! :) Thank you! I'm like you, I don't like buying a lot of stuff. And I HATE pastry bags, too! I've also tried both the squeeze bottle and plastic bags (zip-loc bags are common) with less than stunning success. Actually, they're both troublesome. Squeeze bottles are better for making fancy pancakes. And plastic bags, besides seams, can rupture because there's no way for air to escape. Then you have a mess. Love the all tips about the parchment paper. I am going to try this tomorrow.

+Julia M Usher Just popped in to quickly tell you how it went. Okay. I tried about 10 times to make these and failed. :( They just wouldn't stay. And you cannot tape them together. Tape doesn't stick to parchment paper. SO... I thought, why not try waxed paper? I did and, while I still couldn't get them to stay, I could tape it and they stayed. I've now tried icing with them and they work well. So, waxed paper makes a good alternative as it is a lot more common than parchment paper. Some stores don't even carry parchment paper anymore. I'll keep trying with the parchment paper but right now the clock's ticking. Christmas eve, you know?

Let me think. It's been a few days (well, the holidays) so... I just couldn't get them to stay -- and the 3 tips were never on the same side of the cone. It was more like 2 on one side and 1 on the other. I will try it again with the parchment paper. I'm in NJ but have trouble finding it. I saw it recently and snapped it up but it's only one roll.

this was a very comprehensive and easy-to-follow tutorial! Thanks to you, I now have a little stack of parchment cornets for cookie decorating later. The last time I decorated cookies, I used the little disposable plastic bag cones for icing, and the seams on the side broke when I tried to pipe fine lines of thicker icing! Very frustrating. OMG! Thank you! Thank you! Thank you! This has totally revolutionized how I decorate cookies! I totally agree with you.....the bags with the couplers are suppose to be more helpful but it's just something else to fiddle with and CLEAN.....and the plastic disposables always have that seam so you can never get a nice round hole! These are AWESOME! I can just pipe, you're absolutely right...I have WAY more control and at the end if there's any left over just snip and in the bowl or chuck it! No mess! No fuss! With over 100 cookies I'm making for Christmas to give away as presents this has just made my Christmas a much less frustrating one. If I could hug you right now I would! Have a fantastic Christmas! ;-)

I've used all 3: Parchment paper, reusable bags, & tossed plastic baggies - I prefer the disposable bags b/c they give a more precise feel as to how the piping is pulling through and how much is being piped through the tips. Much of this is done before filling the cone/bag but when combine with the warmth of hands, it will change the consistency of icing, albeit, toward the end of my decorating years, it wasn't much of a problem since I have raynaud's syndrome caused by multiple autoimmune diseases, arthritis, osteoarthritis, and a matter of loss of circulation in my hands making them cooler to cold to the touch. My late mom used parchment because it is what she was used to using; however, she wasn't gung-ho against the use of bags be it parchment reusables or toss-out disposables. The Marine Corp sent Mom to culinary school, so in essence, I have the Marine Corp to thank for my having the opportunity to make a bit of money on the side while in college through making decorate cakes incl'g wedding cakes & retirement cakes; in addition, I made countless hundreds if not thousands for my daughters' schools to help bring in funding for new playground equipment and even the first computer labs in 3 different schools they attended. My oldest has taken up the mantle with regards to making cakes on the side, though I do believe she will graduate to helping the PTA now that she's helping to raise her husband's barely teen daughter (she didn't want kids but adores her step-daughter). My youngest is more into baking muffins and hopefully this summer she will get into baking bread with me. Fingers crossed.

Thank you. When I was in my 2nd or 3rd year of college, I made a cake for the orientation class' last day. It was a basic sheet cake, but I went all out on the decorating using the college colors. The professor loved it so much she had the photographer come down to take a photo of it (been thru this several times w/daughters' school teachers over the yrs), which brought a few other college officials & professors down to the room. The photo ended up in the school's newspaper. A prof who taught the Wilton style decorating followed the photographer to the class; first thing she asked was where I'd learned how to do that & couldn't believe it was from watching Mom all those years even tho I didn't pick up a decorating bag until I was 18-19yrs old. About a week or so later I caught her during ofc hrs & I'd brought the album (long b4 memory stick albums - heck, some of them were on polaroid & 35mm film) I kept most of the best work I'd done. I asked if she would allow me to audit her more advanced classes & she said no. Confused, I asked why. Her explanation was that I already had great technique & the artistry was near-perfect. She went on to say that she didn't want to 'undo' the way I decorated. It took me several years to really understand why she said what she did. It became very true after my oldest daughter came along then got into decorating cakes using icing bags & tips. I'm left-hand dominant; Mom was right-hand dominant; my daughters are both right-hand dominant but they're both left-brain thinkers (aka able to use both sides of the brain to reason - they were both tested in school; my oldest had a learning disability & my youngest is actually academically gifted). I allowed them both to find their own rhythm once they had the basics down. I did this for many of the same reasons that professor wouldn't let me audit her classes. Thank you for making & uploading your videos. I've followed the links from one to the next, and the next, and the next. I've saved a bunch too b/c I want to go back to them later & have a bookmark of where they're located. :)

Btw, I've saved your piping videos w/the cookies as I'd loved to get my youngest to better connect w/icing & I think cookies might be the way to get her there, esp now that I've got my MIL's stand mixer (Kitchenaid). I've burned through countless hand mixers making Wilton Buttercream icing. There always seemed to be something that we needed or needed to have done that was more important than buying a stand mixer. And, we've faced our share of hospitalizations, vehicle accidents, then my husband ending up in the heart hospital's ER & req'g a quad bypass the next morning w/6+mos recovery w/extensive heart problems after - it was just never seemed to be important enough. After the kids got older (our youngest will go from a 3rd yr undergrad to a 4th yr this Friday! can't believe she graduates next spring) it seemed to get a little easier to do more that my husband & I enjoyed doing. It's sort of why I've been working w/yeast-bread making these last several months. I really think she will like decorating cookies.

This is a fantastic video, Ms. Usher. I like how you slowed things down for the sake of showing how to make the cone. That helped me immensely. I've always used the washable pastry bags or the disposable plastic ones. But as you pointed out, they can be a bit clumsy to use, especially for fine work like piping string work or writing. I was wondering, however, do you do a lot of piping with various tips? If so, do you still prefer a parchment cone, or do you prefer using either a washable/reusable bag or a disposable plastic bag? One of the things I really like about the disposable plastic bags is that they have those sharp creases along their edges. I find that really helps me position the tip in the bag correctly, and also when I want to add a dye for a nice two-tone effect when piping various flower petals. What are your thoughts and preferences for piping work with any of the metal tips? Do you prefer a parchment cone, or a reusable or disposable bag?

Thank you for your reply, Ms. Usher. I appreciate your insight. I tried piping some roses with a buttercream in a parchment cone and a rose tip in the cone, but things did not go well. I think I'll stick with the heavier reusable bags for that kind of work and use the parchment cone for the finer work. Thanks again for your reply and advice.

Thank YOU so Much for this great tutorial... The reason I NEEDED to see this is because I'm using a resist on Silk Scarves... and am making my own Flour Past with Glue so I don't have to use Hot Wax on my Silk... Making the lines on the silk fabric just like you do on your cookies. (Hope this makes sense)... I thought of you right away... ;) I agree, I could use a plastic bag, but it is not sturdy enough... You have saved the day... ;)
