01:15 Chop up and apples and place in a large pot
01:45 Fill the apples to within 1-½ to 2 inches from the top of the pot
01:55 Fill the pot with water only half-way
02:22 Add the pressure canner lid and lock-make sure it’s on “pressure” line the dots up
02:32 Use the “rice” setting
02:55 After 3 hours or less, open the lid
03:10 Using a stick blender, blend all the apples and liquid
03:32 Add the cooked apples to a 12 gallon container and repeat the cooking process
04:02 Add 1 cup of malted rye on top of the apples before blending
04:12 Add 1 cup of malted barley on top of the rye and apples before blending
04:38 In a large pot add 12 pounds of white sugar, 2 pounds of light brown sugar and a gallon of water or more, heat to dissolve and cool
05:11 Grind the apples, barley, and rye with a stick blender
05:26 Use a refractor and take a starting gravity reading
05:43 Take a temperature reading
05:53 Add cold water to bring the temperature down
06:03 Take another temperature reading
06:13 Let this cool down to 100 degrees-it make take an hour
06:36 Pitch the wine yeast, 3 packets total
07:40 Progress of yeast foaming after sitting for a few minutes
07:50 The next day, showing the cap that has formed
08:01 One week update-the cap still has not fallen
08:11 Final results of run product

Filming was a bust, the product came out great. We siphoned it off, ran it, it came out at 135 proof for about half a gallon.

I don’t cooking grains with the soured pulp and adding the back set and bringing up the starting gravity up with cane sugar. I usually do a starting gravity of 1.065. If you convert the starches into fermentable sugars it is usually less than a pound of sugar per gallon.
