Filming was a bust, the product came out great. We siphoned it off, ran it, it came out at 135 proof for about half a gallon.

hi i am currently making an apple/pear mash to make into schnapps/brandy and not using any sugar or water only yeast for the mash and i have a few questions perhaps you can give me tips on 1)does letting your mash settle and clear up as much as possible with longer ageing before distilling in a pot still make for a better quality tasting shine or it won't matter? does the suspended yeast make a difference in bad or better taste? 2) before doing my second run should i dilute my low wines to say 20%abv with water as i seen many ppl say to do or wont this dilute the natural juice flavors, aromas and alc even more striping them away? 3) once i finished blending and want to age it for a few months in glass should i keep it at the same abv strength or cut it down to my drinking preference first?

interesting how there are different ways to mash but i would think boiling changes the chemistry of the aroma and flavor no? as for me i cut them up without core or stem, put them through my juicer which separates the pulp but i add the pulp back in the mash for better aroma and flavor pick up plus more alc, it is a pain having to strain the apple sauce but possibly worth it

I don’t cooking grains with the soured pulp and adding the back set and bringing up the starting gravity up with cane sugar. I usually do a starting gravity of 1.065. If you convert the starches into fermentable sugars it is usually less than a pound of sugar per gallon.
