Neven is a name you will know about in a few years when discussing fruit brandy. His attention to detail, respect to nature, and passion for distilling is something I truly admire and respect. I am so glad I got to learn from him and even more proud to call him my friend.
➡️ Neven distilled his first fruit brandies with his father, when he was eight or nine years old. He learned to make whiskey on an ADI internship at the Cedar Ridge Distillery in Swisher Iowa and plans to open a distillery in his native Croatia.
➡️ Additional Information about the distillation process:
The distillation is a process of taking a liquid mixture that contains lots of chemicals with different boiling points, boiling the lot of them, and controlling the condensation process. The more volatile liquids will boil sooner than the less volatile liquids, so they can be preferentially captured since they will condense sooner.
➡️ What Does The Terms Mean: Foreshots? Heads? Middle cut? Feints? Tails?
A “cut” is when the output of a pot still changes from undesirable to desirable (or vice versa). When the cut is made, the liquid output from the still is literally redirected to a different receiver (container). “Heads” (also known as “foreshots”) precede the “middle cut,” which precedes the “tails” (also known as “feints”). The “heads” or “foreshots” can contain unsafe or unpalatable chemicals.
The “middle cut” is the desired output of the pot still. The “tails” or “feints” are what comes out of the still after sufficient alcohol has been extracted from the still such that the concentration in the output is no longer high enough.
➡️ Additional Information About The Term Low Wines?
This is the name given to the product of the first distillation in the pot still process of manufacture. It is the distillate derived from the wash and contains all the alcohol and secondary constituents and some water.
It forms the raw material of the second distillation, which is carried out in the Spirit Still. The feints and foreshots are added to the low wines when the spirit still is charged.

Neven, is working on opening up his distillery in Croatia now. Truly an inspiration to me and many out there. I’ve talked to a few distilleries that started small and distilled in there basement, backyards for years perfecting their craft. You just got to start. Keep me posted on when you start. Cheers -Jeff

I just returned from Stellenbosch South Africa with a solid week of wineries, and yet the surprise highlight of my time there was a tour of Van Ryn brandy distillery, learnt so much ! 20 years of ageing in oak barrels !

@@drinkdestinations yeh, we passed on groot... but did most of the other ones... but back to that tour of Van Ryn brandy... I was filming the whole tour but they made us leave all our cameras and mobile phones and electronics outside as this whole dark room that was filled with oak barrels of 10-20 years old 78% alcohol could possibly blow the place sky high. (highly unlikely, but I guess it's possible since you could smell it in the air !)

@@drinkdestinations It looks like you have already been in South Africa, as we have a fantastic brandy route in the Cape, u should try a pot distilled brandy like Oude Meester its very sweet, or even KWV that is the more local everybody drinks it brandy

Great video. I learned a lot particularly a new head sealing technique. Putting a lip around the top of the pot and just using water to seal the head is such a simple and elegant solution. Certainly beats the old flour paste method. Thanks for sharing.

Love Croatia, Croatians and Slivo!! Please keep in touch with Neven and let us know if he ever starts to market his slivovica. I have harvested plums from my trees and neighbors and have two large carboys fermenting away in my kitchen. My hope is to distill them into some homemade slivo.

I want that still. Ive never seen one that works like a double boiler. You could mash right in the pot, and not have to worry about scorching the solids.

at 6:24 your caption says "low wines" but you meant "fore-shots" the harmful portion of the run before the heads is about %2 of the total volume of the run. I have hear it is an excellent glass cleaner and fuel alcohol.

I like how this was produced, very to the point with lots of visuals depicting Neven's environment as well as his procedures. I especially enjoyed the personal interactions and how you looked at him as if you were a music student in the presence of Mozart himself. Any average one of us would meet a guy like Neven and assume there's not much going on within this guy but, yikes, he is internally bubbling with insights and skills. Awesome presentation of an awesome individual doing seriously intriguing stuff there. 10 thumbs up.

What a wonderful video! I dated a girl briefly that was from Bosnia. She gave me a bottle of plum rakija (?sp) that her Dad made - prob. about 100proof. It was SO delicious! It was unlike any other spirit I had ever tasted up till then, and I was hooked. Since then I've found some Hungarian apricot brandies in that style, but not really any good plum ones. Anyone have suggestions for commercially available, E. European style plum brandies?

So if I made a blackberry and sugar mash and distilled that is what I get called brandy or do I have to Age it will oak for it to become brandy ..... sorry I a newbie at distilling

see what sucks is i want to LEARN how to make brandy every part of it and make some so say like 30-40 years down the road i have some aged stuff so i dont have to buy some expensive stuff then, be able to make my own blend of what i know would taste good.

should you strain the juice from the pulp before distilling? I've heard some people say if you distill pulp it can burn at the bottom of the still and cause unwanted burnt/ bitter flavours

so for the first run = no pulp distilled...only pure juice? just to confirm.....so the whole process was a double distillation? did you discard the foreshots in both first and second distillation?

@@12xxddr so you don’t want any pulp because of scorching which will produces off flavors I. The final distillation. We double distilled and made cut points based off heads, hearts, tails. With the end result being around mid to high 50s ABV.

I've had home-made fruit brandy from Hungary ("Pálinka") several times, both plum and apricot. It can be really tasty but also very strong!

The cool thing is that the whole village was a tribe. They would stop over and say hello, bring fresh cheese or meat. Alll food was literally farm to fork. It was a great experience and I’m glad to have shared it. -Jeff

btw since i have explored into plumb brandies in term of moonshine i tried a couple of kinds the maraska brand and one called navip that is supposedly aged 5 years although it has a very straw pale color and i did not like it, it was half way between shine and aged and just tasted bland and not pleasant or right , the maraska one from croatia is def my go too for eau de vie plumb shine, both aroma and flavor are spot on with a hint of tails in the right amount and after a couple days in the bottle with just a couple ounces removed it was so smooth i could not believe how it changed from rough to mellow like that , but i recently dabbled into an oak barrel aged one from serbia called stara sokolova after some research and finding a store that had more variety and im not into brandies but this was spectacular ,has faint old aged plum aroma notes and suttle plum smooth flavor with roasted nuts like almond /hazel on the finish ,very lovely stuff and def a brandy i would drink with cigar or certain foods or just a winter warming sipper on its own ,and the unaged maraska i even make cold remedy from it ,so slivovica maraska and stara sokolova are def my go too's from now on although the last one more pricey , i also recieved an older looking bottle of plum hine from hungary and dont really know the brand name but im saving that one to learn more about it ,could be something they have there or perhaps an old bottle someone found in the cabinet

I think whisky or bourboun it is easy, all time the same grain and just put in cask and time. Fruit brandy required much more skills and experience. Pozdrawiam.

Yeah, a lot of research. Sometimes while I’m in the country I find out which places to visit as well. Word of mouth or someone messaging me has also been helpful, but mostly it’s a lot of research on what I am curious about. -Jeff

When distilling fruit brandies one has to be extra careful with the cuts. The fermentation produces far more methanol than grain or grape ferments. That's why Neven pays extra attention to it.
