A delightful August, 2013 afternoon is spent planning, preparing and consuming Sarma, one of the finest delicacies of the Armenian cuisine (which itself is riddled with various Middle Eastern and Eastern European influences).
Under the culinary artistry of the Glendale-renown grandmother Mary Koulian, grandchildren Lusine and Allen enjoy the special privilege of being entertained with the unraveling of one of their family's long-kept secrets: the Sarma recipe of Marash, Western Armenia. The declassification of this cultural jewel is an important development in the ongoing quest to preserve the Armenian heritage that spans millenia. Here, before your very eyes, is a cinematographic attempt to accomplish just that, as the passing of time and of lives create the perfect environment for apathy and neglect to gain hold, catalyzing the erasure of ancient culture and wisdom.

Very nicely done Shnoragalem thank you, most people have a rolled dish with filling to their liking, you've made this beautifully Armenian style ~ the Polish and Italian use cabbage leaves ~ the reason we use the word sarma or dolma is those who invaded our country forced, forbade us to speak our language in some areas the punishment was harsher , in Adana there was a time your tongue might be cut out ~ those who occupied our land and eventually made an effort to murder our nation were semi nomadic and did not have vineyards ~ this dish you have shown us was made by your people before the time of Christ, Father was from Dicranakertz ~ the invaders call it Diybakyer , however it is spelled. From the way you have done this beautiful food, I think your folks may have come from Harpert (Carpert ~ Stone Fort) ~ God bless you and all who love you, I enjoyed watching, you did it so well ```

This is the vegetarian version of Armenian Sarma. I remember helping my grandmother as a kid making the non vegetarian version of this. This may be the original way to make Armenian Sarma, but the more westernized version of it is made with rice and raw/uncooked seasoned ground beef. (What I grew up on) It was cooked later on, we ate it with Armenian Rice which my Dad always made, tomato sauce, and I never remember if it was yogart, or sour cream that we put on top of it. Either way it's freaking awesome tasting! Sadly, this video makes me miss my Grandmother and Dad. It is hard to watch your family for me, because it brings back memories from my childhood of very similar circumstances. I'd be interested to see how your Grandmother makes Manti, or Monta as we called it. ;) P.S. I used to speak fluent Armenian as a kid, but some how I just forgot, but I do recognize words here and there watching the video. I'm also first generation born in the U.S. in my family.

Awesome video...👍🏼👍🏼👍🏼 I used to say sarma myself growing up but I learned later the actual Armenian word is “tolma” not dolma or sarma. I rather use the Armenian name going forward.

With all due my respect to you and your culture (which is really rich), Sarma is a Turkish traditional food. Even its name comes from Turkish language. Sarma is a Turkish word which means "Roll-ing". It is really good to see that we share same culture, though. Afiyet olsun, bon appetit my friend :)

Utku Bölükbaşı Merhaba, I appreciate your comment. In fact, I mention in the video (at 4:16 ) that sarma is a Turkish word (my grandma speaks Turkish and says “sarma sardığ,” which as you also said means “to wrap” or “to roll”). Yes, we share the same culture, my great-grandparents were from Urfa, Aintab and Marash, and they spoke better Turkish than Armenian. If you are ever in Los Angeles, you are welcome in our home. @@allendish actually i could have easily guessed your grandmothers hometown because of the high amount of spices, tomato and pepper souce.marash and kilis have the best dishes among other areas in turkey.
