Dear Adam, i hope you reading this. I'll tell you a true story of mine. I work as a cook and last week i have a food testing for my new job(fyi this is my first ever job in a japanese restaurant.) I remember i watch this video the night before, so i decide to make this dish for my test and i even make your teriyaki sauce as well (believe it or not this is the first time ever i make chicken teriyaki)...And guest what tomorrow is my first day!! @c b i get where you are coming from, but as it was explained in the video it sounds like oil+preheated hot pan behaves differently as cold pan+oil and then heat it up to the same temperature before adding the chicken into the pan. maybe i got it wrong (not native english speaker)

I assume that Masterchef Australia is a bit underrated show compared to US... but yeah Adam Liaw is good he won the season 2 Masterchef no doubt a raising star for that season he even won an immunity for beating a experienced chef.

I just subscribed ! I am learning so much.... we don’t have to go out to eat ( well...less....) hubby said he liked my home made teriyaki chicken , even better than what he tasted at restaurants, cause they used breast. Like you I prefer boneless thighs ! Keep those videos coming ! I keep sending videos to my children , hoping they would like your easy tasty meals . You cook with such simple steps and simple ingredients. It makes learning fun!

Every time I’ve attempted teriyaki following other recipes in the past, it was either too salty or no glaze. I tried this for the first time today and it came out perfect! My daughters enjoyed it!

I love this dish, and how simple the sauce is. We just tried this recipe. We've done a lot of from scratch teriyaki sauces, and this is by far the easiest, and the best tasting (at least on chicken). Thank you for this video good sir.

Hands down the best terriyaki chicken I've ever made with the simplest steps to follow. Before today I almost hated making my own terriyaki chciken cause they Always came out dry and the flavours didn't cut it. Thanks Adam!

from what I see from the packaging shape, iIthink its a Kewpie Mayo (try to google it first, see the packaging image, the most important is they have the baby shape imprinted on the bottom front). and for the sprinkle i think its a seaweed flakes.

What heat levels should I use when cooking the chicken and after adding the sauce? My chicken turned rubbery and the sauce was slightly burnt :(

Turn it down some, obviously your heats to high. The sugars in the sauce are burning, and the Chicken is over cooked. Try a medium heat after you add the sauce, that should help a great deal. 😊

I made the basic. Generic teriyaki, chicken breast, and cornflour. Your instructions made it so much easier! I’m not a cooker but this means I can eat teriyaki chicken for a whole lot cheaper!

Tried this for dinner tonight. I’ve never used corn starch like this but, that’s what you said to do. OMG….this was SO good! The chicken was so tender! I came very close to achieving nirvana but for the desire for more! Thank you!

Just made this (eating it right now). Wow , just amazing! I live in Arizona USA and love Asian cooking. I had everything for the sauce, but no corn flour (masa as we call it). So I substituted it with grits!! Great extra crunchy and kinda sesame seed quality! Happy to subscribe!!

Thanks for your videos, particularly this recipe. I am constantly looking at recipes but rarely feel that I could do justice to the food with my skill level. This recipe is simple enough, but your explanation of the technique is what makes it seem very doable. I absolutely have made the mistake you mentioned about over cutting and winding up with rubbery chicken pieces. I'll be making this as soon as I next get to the shop to buy Mirin and Sake. I like leaving the skin on my chicken thighs, then cook them skin-side down. Once the skin is crispy, I turn them over and cook the other side. Once that's done, I add the teriyaki sauce, cooking on both sides and let it saturate. Then I take them from the skillet, cut them into bite-size pieces and serve over steamed rice.

When I was younger, you couldn’t have bribed me to break away from KFC and try this stuff but as time went on, I got to like it. This video convinced me, though, since I have only ever had it in Mall food courts, that I have never had proper chicken teriyaki before.

Joel Perler Any flavorless oil will work, vegetable oil, grapeseed oil, etc.

I made this last night, and it came out great, even though I used breast meat because that's what I had on hand. But I came up with two questions: > That looked like a lot of oil you used in your pan; did you drain some of it out before starting to sprinkle in the teriyaki sauce? Or did you just leave it in? > I had to do this in batches, because I was making a lot. Is there any way around cleaning the pan in between batches? I didn't want burnt teriyaki sauce. Thanks for the great video!

when you add the cold oil into the hot pan, should you wait for the oil to heat up or can you put in ingredients instantly?

If the pan is hot enough the oil will be hot as soon as it goes into the pan, so you don't need to wait at all.
