5lbs Beef Shank (bone in center cut)
1 1/2 white onion (diced)
2 ribs celery (diced)
1 green bell pepper (diced)
4 garlic cloves (minced)
2 Rosemary sprigs (whole)
3 thyme sprigs (whole)
6oz can tomato paste
1 1/2 TBSP Beef bouillon powder
1/2 TBSP white pepper
1/2 TBSP ground cumin
1 TBSP paprika
2 TBSP soy sauce
3 cups water
3 TBSP cooking oil
salt & pepper (to taste)
cornstarch slurry
2 TBSP cornstarch
1/4 cup water
(add more if you desire thicker gravy)
Braise at 250°f until tender
