Ingredients:
1 ½ cups rice flour
¼ cup ap flour
1 tsp baking powder
¼ tsp salt
2 large eggs
3 ½ tbsp sugar
4 tbsp ghee
½ cup jaggery
½ cup powdered milk + 1 cup liquid milk
1 cup coconut
Instructions:
1. In a bowl, mix rice rice flour with ap flour, baking powder and salt
2. Whisk eggs in a separate bowl then stir in sugar, ghee, thick milk, jaggery and coconut
3. Gradually mix in the dry ingredients to the wet ingredients
4. Coat the baking glassware with butter or cooking oil then pour in the batter
5. Cook the pitha for 55-60 minutes on low heat with indirect steam using a large pot
6. Ready to enjoy!
