Braised beef is one of my favorite dishes. In the Philippines, there is a similar dish called beef fritada. The recipe makes use of brown sugar instead of carrots. But I learned from Vincenzo that a carrot is a better neutralizer of acidity in any tomato-based dish so I now use carrots instead of sugar.

Oh yes my nannies always cook afritada for us when they’re in a rush, btw they only make chicken afritada because they don’t have the time to wait. It’s one of our favorite foods!

Im from Kansas in the middle of the USA, we love goulash! i remember eating my grandmothers when i was a kid. so good. im giving this braised beef recipe a go this evening. is there a German food similar to these dishes that you would recommend? I love trying new foods and since im a history buff, learning what different cultures have eaten throughout the centuries is fascinating to me....i feel like i can touch that history by eating the same food. have a nice day!

how strange... I'm Hungarian but looking at this recipe made me think that deep in my soul I must be somehow Italian as well :) I made almost exactly the same dish several times; the difference is in the ingredients of my sofritto: I add more onions, ginger and 3-4 cloves of garlic to the celery and carrot, and I also add a bit of thyme or oregano (depending on my mood or the given ingredients) I just came up with this recipe myself, I didn't even name it :) I can also see your point in bringing up goulash in comparison. This just points out how close and related we are all in Europe.

@@justindearmond1 There's a variety of German stews, which we call "Eintopf". I'm sure you can find many good recipes online, though I always stick to my grandma's recipes hehe But generally traditional German food hardly uses any tomatoes, because it doesn't grow very well here compared to the mediterraneans. Instead dairy products or stock are common in sauces

Made this yesterday. Came out fantastic! I was a little unsure if the consistency of the cream would be to soupy. But as it cooled it was perfect. This was an absolutely delicious meal. I could not believe how tender the beef was.

This is wonderful, Vincenzo, and reminds me of my nonno! He used to make braised beef on sundays, once a month he threw my nonna out of the kitchen and made sunday dinner. As soon as I am done moving to my new place, I will definitely make some braised beef!

That meat does look kind of grey though, I would brown it on high heat in a separate pan to really get a good caramelization without the risk of burning the veggies and then dump it in the pot. It will still get the flavour from the sofrito when cooking that long. Looks delicious regardless!

Actually my mom used to do this with pasta (not the exact same recipe) and i can assure you it is a great dish. The meat would be the same as you did here, since it's slow cooked it melts in your mouth. The main difference from your recipe and my mom's is that we (portuguese) use pressure cooker a lot for slow cooking [meat].

@@vincenzosplate Yes it is but it's usually a bit simpler than your take / recipe, most of the times just the meat's broth gives the pasta an awesome flavour and we only add a bit of onion. But as always, i'll be trying this recipe because you can't go wrong with slow cooked meat!

This over rice or egg noodles is fantastic as well. The variations are endless. Drop some frozen peas at the very end for a sweet pop etc. But this with homemade warm bread and butter on a cold day will warm body and soul.

I think braised beef exists in my culture, it's called caldereta (dunno, I always confuse it with afritada) basically it's this braised beef recipe but flavors made stronger, because we eat it with rice. 😋

I haven't even watched it yet and it already looks delicious. And 15 minutes later it still does! I love a good stew. Although I think two hours is not enough. You can make it early in the afternoon and then have it for dinner. The longer it cooks, the better!

Buying full cuts of meat rather than pre diced, minced or sliced is the same principle as buying whole tinned tomatoes instead of crushed. The lower quality bits get broken down. Also full cuts are cheaper.

Vinny there's a a Roman meat sauce before red sauce was in Italy I think it cooks for like 16 or 18 hours it's very rare, can you cook that one? It's definitely a myth, a lot of people use EVOO for cooking. It's very useful because EVOO retains the same temperature during cooking, this helps lessen the chances of burning your food.

@@vincenzosplate I will make it just like you tomorrow! I always love to try different recipes! I usually make mine with celery, onions, sweet bell peppers, garlic, whatever alcohol I have (usually red wine ,cognac, or whiskey,) some micro greens, and even sometimes chunks of potato! As for the liquid base, it is usually beef stock, fish sauce and soy sauce! Only a tablespoon of the fish sauce and soy sauce, to 1 cup of beef stock. I use dry spices as well, but that varies for me. One of my favorites is paprika, cayenne pepper, and just a bit of cumin. My favorite part about braise beef is how much you can change things, and still make a delicious meal! Especially when it’s put on top of some creamy polenta 😋😋😋
