Thank you for this recipe. What's the difference between cake flour & bread flour as per your video? It's the same ingredients. Only thing you didn't do was to sift the flour in the end (for bread flour). Can you please clarify?

Exactly my question. In another video with the same measurements the person reduced 2 teaspoons from all purpose flour and added rice flour to make it bread flour. And I think it makes sense because rice flour tends to cause crispness and may eventually cause more air inside bread/cream puffs.

@@amyburrblotner u are totally right. The video mix up everything. Adding cornstarch to APF is to lower the protein. Bread flour is high in protein so how can cake flour and Bread flour is the same. so wrong

@@JamieJamie2011 The addition should be vital wheat gluten to make bread flour. Anywhere from 1 teaspoon to 3 tablespoons depending on the result desired. Vital wheat gluten adds protein which alters the chewiness of the end product, the more vital wheat gluten the chewier the bread.

LET'S SEE cake flour is low in gluten for a soft crumb so your cake does not turn out tough or chewy and Bread Flour has higher Gluten to form strands and trap CO2 gases formed by the yeast so your bread will rise !....But you say and show cake and bread flour have the same ingredients in this video how's that possible ? Your going to have either a nice cake or itll be tough and chewy or you'll have a nice loaf of bread that falls apart like cake ? I'm confused please help explain

@@Prairiechicb For cake flour you put 1or2 Tbsp of corn starch in to the total flour amount of each cup of flour..Corn Starch is low gluten and is a finer flour it will create a higher density of cake with less air bubbles

That’s because the bread flour recipe is wrong. For bread flour I subtract 5 grams of flour per 120g (1cup) and replace it with 5 grams vital wheat gluten.

Your right. They stuffed that up. You need to add vital wheat gluten to increase the protein content. Just buy bread flour from the store.

Videos like this annoy me to no end. The way this person makes the bread flour is wrong, and almost every comment reflects this. Why not just remove the video and upload a correct one? Anyway...for BREAD Flour - 1 Cup of AP flour (125 grams), remove 1.5 teaspoons of the flour and replace it with 1.5 teaspoons of Vital Wheat Gluten. Whisk well. Any supermarket or spice store should sell this. Maybe even a health food store.

Bread flour recipe is wrong. For every 120g of flour replace 5g vital wheat gluten. I buy 50 pound bags of AP flour and change it per recipe
