The reason that the colour of the tea turns purple when you add lemon juice is because the addition of citric acid lowers the pH, and increases hydronium ion concentration. Thank you for the recipe!I have just made it and it tastes delicious! I have some notes though: 1. I added one table spoon of tapioka flour to the boiling sugar and water and got too much lumps, I threw it and made it again but added the tapioka flour to the mixture when it was warm not boiling, and it worked! 2. While kneeding the dough, I added tapioka flour about three time, stop stickeness. 3. I made the syrup with half the ingredients mentioned (1/2 cup of each water and sugar), but forgot to biol it for 5-7 minutes, just boiled for 2 minutes then soaked the bubbles in it.

@@gloomyxox8437 of course!!! To be totally honest I had the same problem so I just continued to add tapioca flour until I got a similar texture. My dough was slightly dry but not crumbly. So I made sure I kept my hands slightly damp when rolling out the tapioca pearls. They ended up turning out perfect even though I’m sure I messed up somewhere along the way. When you add the tablespoon of tapioca flour at first I realized that you need to make sure to take it directly off the heat and make sure it’s slightly thick before adding the rest. I messed up at that part but just kind of winged it after that and I’m pretty sure they came out the exact same. Hope this helps! Good luck!

My first time having boba: I was on a trip to London. I'm from northern Ireland. We don't have boba/bubble tea here, I had never heard of it before... So when my friend offered me to sip I tried it and didn't realise the pearls at the bottom were edible. It shocked me that they went up the straw so fast and I chocked on the boba pearls and accidentally became a camal and spewed the drink out. The boba turned out good. I made this with my 12 year old. We used brown sugar instead of Muskado sugar. We also used corn starch since it was very sticky dough. It did take an hour and half for us.. that's taking a few shortcuts. I would make this again.

Oh wait that didn’t come out right lol. You should try it though it tastes life changing, it’s mainly a common drink that Asians drink given that boba is from Japan I believe

@Horse Loving Vampiress It is great. Obviously there are several different flavours and variations, too. But usually the first time the tapioca pearls catch people by surprise, but they're chewy and sweet.
