If you remove all the pith in the beginning you can reduce the blanching to twice which saves a lot of time. Also if you drain them, coat them in the sugar and leave them to dry as soon as they are cool enough to handle, you save at least one of those 24 hour steps.

I prefer keeping the Pith because it's much healthier. Our local oranges doesn't have thick peels. We just peel them off :)

Thank you for this wonderfuly detailed recipe. Would the procedure be the same for lemon peels as well? Also, how many oranges were you using in this particular recipe.

@yahuahamashiac This recipe is called "candied" orange peels. Candy: any of a variety of confections made with sugar or/and syrup. Syrup: a sweet, thick liquid usually prepared with sugar and water. So no wander why is too much sugar, honey!

2:1 sugar:water, volumetric. Do you mean 20 strips of orange peel? is that from ~2 or 3 oranges?

How about using a peeler and peel it that way so you don't have to deal with the pith? Cuts out that step and you don't have to worry about any bitterness.
