I made a batch of this a few years ago and I also used honey and ginger. I made the mistake of hitting the batch with a stick blender and turning the lot into a puree (it was my first attempt at jam). Also left the room when it was boiling and it rose up out of the pot and made a sticky mess on the stove. However the resultant jam was delicious and only improved with age. Right NOW I have chopped up two rockmelons and used half a coffee mug of sugar, half a mug of honey and half a mug of Buderim Ginger cordial mix as this is thick and syrupy with a good ginger taste. I also added about a teaspoon of ginger powder and about a dozen thinly sliced pieces of glace ginger. Will chuck in some cinnamon and some lemon juice and wasn't planning on pectin but I will add a finely chopped green apple I have on hand. I'm trying to use less sweeteners but the its looking a bit watery. Think I will slowly reduce it. It's a work in progress.

Instead of pectin could I add a grated apple instead?

Apple is a natural source of pectin so I would say yes! you may need to finely blend the grated apple though as the addition will change both the texture and the clarity of the finished jam.

This will be the second time my wife has made your rock melon jam. Yep in Western Australia We call em Rock Melons. and this Jam is Awsome.

I'm so glad y'all enjoy the recipe! Its one of my familys' favorites too although by cantaloupe harvest has been very poor the last two years I've had to use store-bought melons instead. Still taste delicious! just lacks some of the depth of flavor.

How did u put that plastic tray in the boiling water at the end?

The plastic basket is a Canning Basket made by Ball that is part of their "Canning Discovery" line. The tray and handle do separate into two pieces for easy storage but the whole thing (basket and handle) fit nicely into a good sized menudo pot.
