You are amazing! I love listening to you speak. I am originally from Rochester, NY, 72 years ago, so after 25 years in SC I love to hear a real New Yorker talk. The bread is beautiful, and what it means to you is even more beautiful. I made my first loaf today, and it's in it's final rise. I hope it turns out at wonderful as yours did, though I only made 1/2 recipe. Thank you for your time and energy you put into this video. I hope you and your family are always blessed.

Thank you for your kind information! My 6 year old learned about shabbat at school and we thought we would adopt some traditions. We will be making challah tomorrow and lighting candles on Friday night. Many blessings to you.

@@mpedals Wonderful! Thanks so much for sharing. it's all about the time and the love! Baking so much bread during this pandemic has made me appreciate how TIME itself simply adds a lot of wonderful texture and chewiness to breads of all kinds. Also, sometimes I take this dough and make FOUR loaves out of it so that I can put some in the freezer.

@@cookjewishy1182 we now how a favorite bread in this house, i took half the loaf, i made two, and put on the woodstove to stale it, and made french toast ,,,,,and it was absolutely delicious, today, is four strand day,,,next will be loaves in the breadpans, great idea about freezing

Got to practice those braids. Nice recipe well explained. Never heard someone mention the correct temp for doneness in breads - great. You said 180 F for egg breads, would appreciate the temp for non-egg breads. Tnk u.
@cookjewishy11822 жыл бұрын
Most guides I have read suggest 190F for bread being done (egg or not). I like mine not quite that "done", but obviously it's very important that it be cooked to a safe temp, so I go for 180 as my minimum

Wonderful video. Someday your children will remember this video, and have the memories of how you did this for them. It may even inspire them to keep the tradition going. My grandson, 21 years old, hardly eats any bread but Challah disappears when he is around. I guess I better show him your video so he can know that real men also follow the tradition of baking. In a couple if days Hanukkah begins so we will be celebrating with a lot of traditions. Thank you, and “Chag Sameach!” to your family.

You mention chew challah versus the one you are making. My question is, what kind of challah is yours then? Is it like the ones they sell in kosher stores? Like really soft?
@cookjewishy11823 жыл бұрын
Not sure which remark of mine you are referencing. This challah is a chewy challah. It is soft, sweet, and moderately dense. In my experience, it is more moist, dense, and chewy than the pre-made challot you will find on grocery store shelves in plastic bags (kosher or not). It also has an enormously satisfying "pull" when you break it apart with your hands. :-)
@veraroncelli72853 жыл бұрын
You need it for so long. I find that kneading the bread too long makes for a more dense tough bread, it isn’t as light and airy.
@cookjewishy11823 жыл бұрын
My family loves a chewy challah that has a great "pull" when you break bread together. But, to each their own! :-)
@alanhirschman13202 жыл бұрын
Kneading builds the gluten structure, which holds the gas formed by fermentation, leading to an airy, light crumb. Remember, time is an important ingredient in baking bread. An enriched bread like challah, similar to brioche, contains eggs and oil, which slow fermentation. Therefore more time is required for both rises, before and after braiding.

Check out Jamie Gellers challah bread video. She has the best recipe and technique. More flour makes challah tough..if.you pil your hands as you need uou dont need more flour.. the oil is whats going to guve you a smooth shiney dough
@cookjewishy11825 жыл бұрын
To each their own. I think this recipe (in this video) is my absolute favorite, and I've tried quite a few. The result is never tough, but rather deliciously chewy, which is the texture my family loves. But, variety is the spice of life, of course! Shana Tovah! And if anyone wants the link to the original 1976 recipe as published in the NY Times: www.nytimes.com/2008/09/28/magazine/28Food-recipes.html?action=click&contentCollection=Magazine&module=RelatedCoverage®ion=EndOfArticle&pgtype=article
