Yup, Smart Dad..I do the same in my recipe. I try not to mix it so much either. Breaks down the potatoes until they almost look like they’re mashed.

If you add the vinegar or pickle juice to the potatoes when they first come out - while they’re hot, it adds more flavor layers.

Add a tablespoon per quart of vinegar in the water you're using to boil the potatoes in and your potatoes won't be mushy.

To the dressing I'd add onion powder and garlic powder, paprika, swap regular mustard for Dijon, mash the hardboiled egg yolks and instead of salt i use adobo. Gotta add drained canned pees and carrots with a little relish too. Also i like to mash 25% of the potatoes with a little butter, and saute half the onions. Bussin.

The best potato salad I've ever had is very similar to this, but uses a fair amount of Dijon mustard in the dressing. I also like to add some chopped hard-boiled eggs to mine I came across a version, a few years ago, the Martha Stewart version, I think? Can't quite remember, but it had a dozen hard cooked eggs in it, way too much egg for my liking. But mustard is one of my favorite condiments, so go figure. Good stuff though
