82 year old Giovanna Bellia La Marca shares her recipe for 100% chestnut flour tagliatelle. This happens to be gluten free, but it's not a modern recipe. It's from the days when food was scarce, folk too poor to buy wheat flour, and chestnuts were an abundant, free source of food.
To make it, use 3 cups of chestnut flour and 1 cup of boiling water.
The dressing is 300g of ricotta, with enough milk to slacken it (how much will depend on your ricotta).
