My grandma used to be a total pro at making orecchiette (she was from Basilicata, just next to Puglia) and she tried to teach me but believe me and believe Claudia when we tell you it's frickin hard to make those little delicious bastards. You either make them so often that you become a pro yourself or you give up and buy them at your local pasta shop.

When you practice a simple and manual task, after a while it comes less down to sight, and more down to the subtleties you feel at the tips of your fingers. At such a high level of pasta making, you know exactly how it feels to get it perfect, and you no longer rely on your eyes. You can feel that she's done it her entire life.

I love watching elderly people make food, it's just something about the way she was able to hold a perfect conversation, while also continuing to make the pasta without changing pace. I used to feel like a bother when I'd be in the kitchen watching my great grandma, but one day she told me that she was happier when I was asking questions than when I just watched because she wanted me to learn the traditions of our southern roots in cooking so I could pass them on to my children and so on. To this day, I feel so humbled when I'm in the kitchen with someone's grandma because I feel like they have so much knowledge and culture just waiting to be graced upon some lucky grandchild. Elderly women in general can be so wholesome, but I feel like the elderly Italian women really take the cake. This was like watching an interaction between Claudia and her own grandma. Absolutely beautiful video. Bellissimo!

It was shooting during summer time, wearing mask was not compulsory coz high temperatures keep virus "weak" and saliva evaporating in less than few seconds. Now winter is knocking at Italy's doors and we are "nella merda"

Sono romagnolo.. una volta mia madre andò in Puglia e mi portò un sacchetto di orecchiette originali baresi con peperoncino. Le ho fatte con un sugo tipico romagnolo fatto con pomodoro, olio d'oliva e scalogna.. Ragazzi.. io me lo ricordo ancora.. Ho unito l'Italia in un piatto semplice che dire salutare e gustoso significa sminuirlo... una BOMBA!!! Le cose semplici ragazzi, le cose semplici! Alla fine la tristezza è semplicemente la morte lenta delle piccole cose nel nostro cuore. Un abbraccio al mio paese.

I'm from Bari, and I can say that our grandmothers are exactly like Nunzia. They are so kind and humble, I love how she does what she does with so much passion. They love to cook and my grandmother teached me how to do orecchiette with turnips and some cherry tomatoes. It's my favorite plate ever and it's original from Bari :D Sindaco Decaro, Claudia merita un riconoscimento per tutto il lavoro e come è in grado di mostrare Bari in tutta la sue bellezza e nelle piccole cose racchiuse nelle nostre tradizioni e cibo.

Amazing how easy it looks, roll a tube, cut with knife then pull back on flattened blade. Unless you try it you’ll never understand how challenging it is to make them consistent in size, thickness and shape. If you don’t get the shape correct then the flavor of the final product will be all over the place. And the dough, as simple as the ingredients seem to be it takes time to know the correct feel. The ingredients are important but remember, give two people some paint and a brush; you get back a painted fence from one and maybe a work of art from the other.

I worked in a michelin starred french restaurant and from there grew my appreciation for pasta making. I love Italian cuisine so to see this only makes me hope to one day have a trip to Italy.

I really loved this, made me reminisce about my time spent working in Bari & Puglia a few years ago, possibly my favourite region of Italy. I probably walked past Nunzia! Can't wait to come back for the food.
