The kids always enjoy this lesson because it is one of the first things they learn how to cook. For the next few weeks I have kids coming to school telling me how they cooked chicken fried chicken and cream gravy for their family. The students rave about it and they said their parents bragged on how they could make cream gravy and chicken fried chicken. This is the best and most educated video on chicken fried chicken and way gravy on you tube. I appreciate the advice on the gravy because I have been making it equal parts grease to flour. On my pan fried chicken I marinated in buttermilk with some seasoning bring it out dry it off season it again and then I bread my chicken and fry it but I use more oil so we can have plenty oil in there fry the bigger pieces of chicken

Texas Style Cuisine I haven't yet made it through all your videos, but I was wondering if you have a video on making brisket at home for a poor soul that lives in Boston. I lived in Texas for a short while, but my fondest memory, besides working with animals, was the first time I had brisket. It was the most amazing thing I have ever had. I know I'll never be able to recreate it, but maybe you can advise on something close. ^.^

Fried chicken,Chicken fried steak, Fried pork chops.thery are all good with cream gravy.my Grandmother and mother showed me how to make this many years a go,but never told me your tips on using the weight vs measuring. you also mentioned either hot to cold or cold to hot on making the roux.guess cuz she always added cold milk to hot roux and expected me to no..very well done and excellent tips..

How long do you let it boil once you add all the milk and it’s boiling?

Not long at all. Just before boilinng the flour will start sucking in the liquid and you will see it thickening.

I thought this dish was called country fried chicken with gravy..In Florida is served with mashed potatoes and side of corn...My mom would take me to Denny's as a child I would always order this... Brings me back to simpler times..I fucking love this dish man

NuckleChucker Far well I hope you figured it out. I just add salt pepper and garlic to taste. I don't really measure it out. Once you mix the flour taste it a little and see what it needs. Thanks for watching.

Great Video T - John ....... Wow I have heard about the roux mixture being like you said in another video once before... I being a Cajun from South Louisiana have always made roux for gumbos and stews with equal parts of oil and flour... 1 cup oil 1 cup flour Etc..... Always came out perfect for me and 500,000 other Cajuns also..... But that is a roux for a gumbo........... I guess for a cream gravy your way is the correct.. I always guess for my country gravies as in breakfast sausage gravy and a fried item gravy.... I learned something today ..... Plus Tard Mon Ami ~!~!

Boo my aunt is from Biloxi she makes it just like you. In fact most people do. She makes the most beautiful roux for her gumbo and crab stew that you have ever seen. But in the chefs book it is by weight. The main difference is by the book is not as oily. But they work just fine. Thanks for watching buddy

I love crabs in a stew..... You can make the best shrimp stew in the world and the only way to make it better is to add a half dozen or a dozen of crabs in it. ........ The flavor from the crabs is awesome...... I was raised on the coast of Louisiana near Vermilion Bay, and we had seafood often..........

Gary I teach at st Philips College in San Antonio and at one of the local high schools. Then I give lessons to groups or individuals by appointment. Sometimes we just hand out and cook.

I've always used 1 tbl butter to 1 tbl flour. should I be using 1 butter to 2 flour also or is that just oil

most people do it just like you do, 1 to 1 by volume. But by definition it is 1 to 1 by weight. which actually is almost 2 to 1 by volume. Thanks for watching and for commenting

1st thanks for watching and for commenting. About the gravy, you have to make a darker roux. Don't go to fast because you can burn it if not carfull. The darker the roux the darker the gravy, but it will take more roux. The darker a roux is the less it will thicken. Also change the liquid use beef stock instead of milk. Hope that helps. Glad I could help. Thanks for watching. I tell ya though it is about 2:1 ratio. two table spoons of flour with a table spoon of fat is close. You would have just a little to much flour for the oil. Also remember the darker the roux the more it takes to thicken a sauce.

But if your curious, I use the small kitchen method and generously add seasoning salt, pepper and a little garlic (strong but not over-powerful to taste) to the flour initially. I buttermilk AND pound chicken in a freezer bag and soak to room temp. take it out of bag, flour it with that flour, fry it, wire rack.. GRAVY: then dump that same flour into the same pan and make the roux... then I add organic chicken stock instead of milk. I actually thin it down quite a bit and then simmer it till its reduced down again quite a bit, then I add organic full cream, and maybe a bit of pepper. makes very rich full body gravy that everyone licks up and wants more.

oh okay I grew up in Temple TX But live in Dallas. if I ever go down there I'd love to eat some of your food. do you have a restaurant?? We use to eat at a restaurant in Vestalia TX that was a barn best chicken fried stk. ever in my life. Nothing has ever came close to it again.

The seasoning are to taste. So season your chicken with salt pepper and garlic and season you flour. When making the gravy you will use 1tbs of flour to thicken 1 cup of milk for gravy. Now remember the darker the roux the less it will thicken the milk, so it takes more flour in your roux to get a brown gravy.

That is the joy of teaching in high school. Sometimes we get kids that are not excited about being there. But since it is an elective usually that is not the case. Debra It is salt pepper garlic. I Jane it in each flour and the wash. It is all to taste. To add flavor you can also season the breast itself with salt pepper and garlic. Thanks for asking and thanks for watching

Aaron Frederick the purpose of the class was to teach pan frying methods. That was not a bechamel sauce it has onion pique and other seasonings. Just a simple gravy to teach the cooking principle of making a roux to thicken the gravy. The flour was seasoned so was the wash. Could of the chicken of been seasoned sure. But I bet you would not have turned your nose up to it. Thanks for watching.

Texas Style Cuisine I understand that it's a recipe for beginners, but why not teach to pan fry and make the sauce/gravy in the same pan, or at least mention it? Isn't making a gravy, by definition, using the drippings from the meat you cooked?

Great points actually I did not use the same pan because the students were sharing pans, so I had them use some of the oil from the pan since when they pulled their chicken out other students would use it for theirs. Now if they had individual pans they could pour off some oil and use the pan and the oil left in it. Also I want them to understand the relationship of fat and flour so I have them weigh it out to get the exact amounts of each. As far as seasoning the chicken I just overlooked it when I was giving instructions. Thanks for commenting and asking questions I always enjoy it. Have a great day.

Texas Style Cuisine well I thank you for the quick response, and I didn't mean to be pedantic in my response. I just saw it as being a bit outside of the normal procedure. As an aside this video made me make chicken fried chicken about 30 minutes ago. Made it with mashed potatoes and roasted asparagus, so I still got a delicious dinner out of this recipe. I like the video and info but not the guy. Don't stop because people are talking, you've already been paid so why do you care if they are paying attention? Also, making shushing sounds at people as if they were dogs is just as rude, if not more so, as people not paying attention to you.

You made a few statments so let me respond to them the best I can. First if I am trying to teach and they are talking while I am, they will not get all the information they need to properly prepare the dish. Yes I do get paid, but that does not mean that since I am paid that I sould not make sure smy students learn. Infact I should be more concerned that the students learn the information set out before them. Next saying shhhh is not rude it is a way to let pepole know that they do not need to be talking. These are high school students and many times need to be redirected. Thanks for watching so sorry that you do not like my way of teaching, butr many students have become very successful and give me the credit for helping them. Have a great day.

Don't get it twisted, I get that you are a teacher. I also get that you get your feelings hurt when someone doesn't give you their attention...like most teachers. I'm the son of one, I know. But I guarantee that even in high school if a teacher shushed me like a dog both my parents would have supported me walking out of that class. That is on par with baby talking an adult, snapping your fingers at a waitress and whistling to get someone's attention. Handle mild criticism much?

I am very good at handling it but if I disagree I will say so. I am not sure where you grew up at but in Texas Shhh is not a terrible thing. If my kids kids walked out of class without permission they would be in trouble. They would have to answer for talking in class and leaving with out permission. The teacher would not be in trouble, they would be. My kids were not raised in a bubble where their little feelings were never hurt. They were taught to do what was right and respect the adult incharge.and to learn to deal with adversity. Not flee from it.

I was raised across the southeast, including a few years in TX. My parents would be upset about me leaving until they heard that my teacher treated me like an animal. It's not about feelings, it's about respect and basic human dignity. As I said, this on par with baby talking an adult, snapping your fingers at a waitress or whistling at someone. Things you do to dogs, not people. How about they start getting your attention by making kissing sounds at you? Or clapping against their thigh when they want you to come over? Heck, this isn't even something new. They made an episode of Seinfeld about shushers if I recall correctly. Seriously dude, just a human dignity thing. As a kid I would have walked out of class, as an adult I give you something to shush about. Just because I think you are boring or my mind is elsewhere doesn't mean you should treat me like a dog.

I tell it get be quiet or hush OH hush and interesting word, I belive that is where shh comes from. lol Shhh is not a dog sound I think you need to get a little thicker skin . I if your moral cumpus is based on Sienfeld reruns then this world is in trouble.
