I've loved Madras curry for almost 50 years and been trying to replicate a great one at home for almost as long. I've done many good ones but your recipe is the first great one. Thank you Imran, this recipe is truly delicious.

*INGREDIENTS* Half a cup of oil A pinch of cumin seeds A few curry leaves One medium onion (finely chopped) One large tomato (finely chopped) Two tablespoons of ginger and garlic paste One teaspoon of chilli powder One teaspoon of salt One teaspoon of cumin powder One teaspoon of coriander powder One teaspoon of turmeric powder Water as needed One tablespoon of tomato paste 400g of chicken breast Three tablespoons of vindaloo sauce Half a cup of coconut milk

Can you tell me why you fry tomatoes after onions instead of adding tomatoes at a later stage thank you

In Indian and Pakistani cuisine we usually fry onions first since they are hard and then we add the tomatoes in afterwards. If we add the tomatoes in too early they will get too soft and stick with the pan and if we add it in too late it will not have enough time to cook properly

I just prefer oil in certain dishes like this, but you could use ghee as well!
