Yes you can. In that case, it is best to use Bomba rice or Albufera rice. These types of rice are more resistant to overcooking and better retain their texture.

I love making paella, this recipe seems to need a little bit more cooking. Rice in general needs to be covered to cook through, but I know everyone has their own way of making recipes lol

Paella is cooked uncovered. You can add hot chicken broth, a little at a time, to make sure your is cooked, but you need to let it dry at the end to create the crust at the bottom of the pan.

Easy fix. Most devices have a volume control . Turn it down or mute it your end
