There's so many different ways to cook adobo, it even varies by Province in the Philippines and practically each filipino family has their own recipe or twist on the adobo recipe. I never had or cooked a pork adobo dish that taste like teriyaki yet....your take on the dish looks really yummy😋!!!

Adobo is from the Spanish word "adobar" means to marinade or to season. The two most important ingredients in adobo are vinegar and soy sauce. Vinegar was probably discovered when the first cask of wines formed sour. The French origin of the word "vinegar" is "vinegra", which means, sourwine. Soy sauce is one of the world's oldest condiments and has been used in china for more than 2500 years. Adobo is an authentic Filipino dish. It is one of the comfort food of Filipino. The cooking process of adobo involves meat marinated in vinegar, soy sauce, garlic, and black peppercorn, which is fry in oil and simmer in the marinate until the meat is tender. Adobo have different variation. It can be chicken, pork, seafood and vegetable adobo. The adobo is ease to prepare, most convenient dish because of the ingredients and have a delicious taste.

Just a quick tip: The secret for a good adobo is having the vinegar cooked without mixing it while it's cooking. :) If you're going to marinade the chicken, separate the vinegar, and pour it only when you're going to start cooking. Never mix the adobo, let it simmer, and serve until the vinegar is fully cooked. :) Good job by the way!! :D Your take on the ribs adobe is amazing! :D Gotta try that!

There are several types of Adobo here in the Philippines! There is actually a version wherein the meat (pork or chicken) are fried first then coated with the Adobo sauce. What you actually did are typical Adobo recipes here. ❤️🙂🇵🇭

SC_Kemz Nowadays yes but old-school authentic? Nope. Just 5 simple utility ingredients to keep the meat from spoiling before refrigerators were invented; garlic, bay leaves, pepper corns, soy sauce and vinegar. Taste gets better the more days of re-heating afterwards. Also, the vinegar content/ratio is slightly more than the soy sauce.

My mom is chinese-filipino... But she makes this in a wok. The sauce is salty and sweet over hot steaming rice. She broils the chicken in the wok with potatoes, bell peppers, ginger, and a lot of that adobo sauce. No garlic is needed

Im a filipino and that dish (adobo)originated here in philippines.. And our kind of way cooking it is ... theres no so much sause in it... Its kind of dry.. And We do not pre marinated it because the taste will become so strong.. You start it with a lot of soy sauce and other spices and also vinigar ... And then you stir it until the sause sip in.. Or in tagolog (manuot).. And get dry.. And the sause will have a jelly like consistency and so tastyyyyy

really appreciated you cooked one of our national dish. just a little tip. it actually works best if you boil your meat with vinegar and once that sour aroma dissapears add in equal parts of soy sauce and a little bit of water..

I know it's tasty. I add chilli and lemongrass when cooking adobo. Special adobo is when cooked twiced. After you remove adobo from flame, re heat then add coconut milk.wow. It is called adobo sa gata'

some Filipinos cook Pork/Chicken adobo by frying the meat first then when the meat's about to crisp they add the ingredients and lit it simmer for a few minutes. you're welcome!
