A quick tip, never blend all spices together. Blend each separately, sieve, set aside. Do that for all spices and then mix all spices togther. The outcome and taste will be very different. This was taught to me by most chinese chefs; if you blend all spices together flavours will meld too much causing the flavour profile of each spice to be 'contaminated'.
