Like your son's artwork on another recent vlog, what is the scent of the Candle on the lower right side of the screen? Professional observers (like the old National Enquirer of days gone by want to know, lol), need to know... 🤣 Between boiling and cooking for over 30 mins, and the carry-over cooking/cooling of 12-15 minutes, isn't the pasta getting a little less al dente by then? Any changes you would make for this particular recipe to ensure el dente pasta at plating?

At ~ 19 minutes, and to save time? I would place all the shells open sides facing up on the marinara sauce and then spoon the cheese (fantastic mix, btw!) into the open end of the shells. Two fingers holding them in place, scoop of cheese, push down/in the pasta with fingers and spoon. Knocks off several minutes of the assembly time. Also another foodie tip? Diced onions, celery, grated, sliced or diced carrots, other veg? Hold back a few pinches of them, dice finely, to sprinkle on top of the meatloaf, soup, pasta, etc. A little more crunch and is quite refreshing, depending upon the application/dish, like topping a little bit of minced fresh parsley, celery leaves, chives, green onions, minced jalapeno or other veg on top, after the baking/cooking is done. Would have done with the radicchio, mixed w the diced onions... just hold back some of the ingredients (your choice/call) to use as toppings for plating. Yum. Great job, Chef!
