This coxinha recipe is very easy to make! you can find the the Catupiry recipe as well ( Brazilian creamy cheese) or you can use the Philadelphia Cream cheese if you like or just the chicken. Maybe you can make a vegetarian version with mushrooms?
You can make anyway you like, just follow my instructions on the video for all the techniques.

Coxinha recipe
Dough
1L of water
150g butter
1 Tbs salt
500g all-purpose flour
Filling
Oil to sauté
500g cooked and shredded chicken breast
1 whole garlic
1 bunch parsley
1 tsp paprika
Salt and black pepper to taste
Brazilian creamy cheese to taste, you can add cream cheese instead
To bread
1 egg
2 cups of milk
Oil (enough to deep fry)
1 cup Panko
For the Catupiry (optional)
1L whole milk
1 Tbs vinegar
2 Tbs butter
Salt 3 pinches
Dough
In a pot, add the water, salt and butter.
Once the butter is melted, add the flour (1 cup at the time) and mix well.
Remember to keep the heat of your stove medium to low.
Keep mixing until you have a smooth and silky dough. The dough is ready when it stops sticking on the bottom of the pan.
Filling
Boil and then shred the chicken.
Mince the garlic, chop the parsley.
In a large sautee pan, add 1 Tbs of canola oil, sweat the garlic.
Add the shredded chicken, add salt and black pepper.
Add the creamy cheese (cream cheese) and keep mixing until all incorporated.
Add the parsley.
