Hello, I am Casayun.
Today, I will be sharing how to make beautiful French bread rolls at home.
This bread has an delightful texture that is very crispy on the outside and soft on the inside.
With simple ingredients, you can enjoy bread at home that is as delicious as the bakery one.
I love having this bread for breakfast and also for bread side dishes.
It looks like a very basic bread, but it can be more delicious than a bread with a lot of ingredients.

French Bread Rolls
6 pieces
- Sponge dough
All purpose flour 35g (1/4 cup)
Instant dry yeast 7g (1 1/2 tsp)
Lukewarm water 40g (2 3/4 Tbsp)
All purpose flour 380g (3 cups and 1/2 Tbsp)
Sugar 10g (2 1/3 tsp)
Salt 7g (1 1/2 tsp)
Unsalted butter 20g (1Tbsp and 1 tsp)
Cold water 210g (3/4 cup and 2 Tbsp)
Please prepare ✓
* Leave the butter at room temperature for at least 30 minutes to get rid of cold.
1. Prepare the sponge dough. Put the amount of flour, instant dry yeast, and lukewarm water in a clean bowl and mix well. Cover the top and wait for 30 minutes.
2. After 30 minutes, add the remaining ingredients in the sponge dough bowl. When the dough has been lumped together, transfer it to the workbench and start kneading the dough. Use the heels of your hands to push down and outward. Fold the dough in half toward you and press down. If it is getting sticky, add a little more flour. (less then 1 Tbsp) Continue to knead, folding and turning the dough, until it is smooth and supple. This can take as little as 10-15 minutes.
Stretch a piece of dough into a thin sheet between your fingers. If the gluten is well-developed, the dough will stretch into a paper thin film without breaking.
3. Form the dough into a large ball. Cover the top and let the dough rest for 30 minutes in a warm place.
4. Transfer the dough to the workbench. Press the dough to remove gas and divide it into 6 pieces. Roll out the dough using a rolling pin. Then roll it up from top to bottom. (Please check the video for more details.) Cover the top and wait for 20 minutes.
5. After 20 minutes, shape the dough again in the same way as in step 4. Put the dough on a tray and let it proof until it 1,5-doubled in size in a warm place.(About 40-50 minutes)
6. 15 minutes Before Baking - Put the towel and hot water in the oven container and put it on the bottom of the oven and preheat the oven to 250℃ (482℉). (Preheating time at least 10-15 minutes)
Before baking, make a long cut on the surface of the dough and spray water on it. Just before baking, open the oven and spray water evenly through the oven using a sprayer also. (If you don't have a sprayer, throw some hot water on the wall of the oven.)
Reduce the oven temperature to 200℃ (392℉) and bake for 13-15 minutes. (Take it out of the oven before it turns dark brown)
7. Put the baked bread on a wire rack to cool completely.

헛 정말 겉은 바삭하고 안은 촉촉해 보이네요 ! 생각보다 재료도 간단하고 정말 이거 꼭 따라 만들어 먹을게요 ! 버터만 발라 먹어도 생으로 그냥 먹어도 넘 맛있을 것 같아요 ㅠㅠ!!!!

Omg!! I absolutely love your recipe. It's a HUGE HELP that you have the recipe in cups also. I don't know grams. So you thought about everything. Thank you so much . I will definitely give this recipe a try.

A digital scale will set you back $10-$12 bucks. On it are unit measure selections. Set it on grams. Much more accurate than trying to measure cups and teaspoons, tablespoons, etc....I was born and raised in what used to be America. Now I live in Asia where everything is metric. It took a bit to learn and adjust my head, but now I prefer it to imperial or usa measurements. Have a nice day.

In Mexico we call these Bolillos or birotes, pan francés. This is by far the best dough I’ve made yet😧✨✨✨ it is so fluffy and soft, perfectly kneaded, it was amazing! I think it’s got to do with the process that you used to ferment it at the very beginning. I’m just in awe

I made these today and they are super delicious and stay soft over the entire day. I experimented with another video i saw on how to get a nice "ear" and it worked out. I was worried at first as i used instant dry yeast mine wasnt as active and after 30 minutes i've only had a few bubles showing. but it worked out fine. Ill try fresh yeast next time

Made these today. Came out really good. Thank you so much im going to make these from now on instead of buying them from store Did the math, not including water(tap) and electricity cost, it comes out to 20c per bread roll. As of 7/22

Making it right now, thanks. I weighed everything in grams with a scale but dough felt lil drier than it should so I added few more teaspoons.

Thank you for sharing your recipe.❤️The rolls looks awesome!!😋😋I had tried another recipe using bread flour, would that be the reason the crumb turned out dense? Would using a stand mixer produce the same result? Many thanks.🌸

Hello, thank you for watching. Yes I use the stand mixer to make the same bread in the same process also. The reason for hand-kneading is to show that even people without machines can make bread. Different oven specifications can produce different bread results. If you've followed the recipe and the top is too dark, I recommend you to lower the temperature to bake it. There is no difference in the results between bread flour and all-purpose flour. Hope that my comment helps you! :)

I will try this. The first time I baked using other recipe my Boss told me if I have a rock ingredients to it! Haha coz it's so hard. So I never baked since then. Thanks for sharing such a great details recipe!!, i make it today however my bread outter crust breaks after i put it out from the oven. I followed the misting spray tips also but it looks like the moisture still not enough. Would you mind to let me know how can i fix this? Thanks you!❤

I Love thanks for trying this brazilian bread recipe i eat that bread in the morning with coffee, cheese and everything you think you just put on the bread is the best bread to eat in the morning or at night its easy and quick to eat i love it ^ ^

I did double the recipe and got regular size bread the original measurements gave me small pieces. Also I had to leave more time since every place has diffrent altitud which affects other cooking factors.
