Prepared it. I had to make some minor changes using instant dashi because dried bonito is not available around here, Tahini sesame paste instead of freshly ground sesame seeds because I was a bit lazy and I used my home made Sichuan spice chili oil and paste just because I always use it for Dan Dan noodles. It was really delicious and satisfying. Perfect dish for our cold weather.

There's a trick that may help. When you cook pork with Doubanjiang, you could try to heat Doubanjiang with a weak fire until seeing the red oil out. Then, put your pork into it, and turn a mid or high fire. It would be tastier I promise.

Just leave the fish out and go for a good tasty broth maybe based on beef bones and dried mushrooms for Umami. In China there is no fish at all in Dan Dan noodles. It is just the Japanese way to prepare broth.

Nice job, but I’m curious if this would taste good? The stock is seafood stock and then you also have milk and butter roux. Seafood and dairy don’t go together I feel no? Could be wrong as this does look yummy
