Well, we made these and like you we omitted the spice blend from the original recipe and we added a chopped white chocolate baking bar and Craisins that have blueberry juice added to them and we all loved them even better than all-purpose flour oatmeal cookies! Hoping to make these very soon. Just made a Bloody Butcher red cornbread for the first time with organic heirloom corn which peaked my interest in Einkorn. I love your recipe videos (just found you) and was wondering if you could tell me what number scoop you used (the number is usually either on the scoop bowl part or the inside lever part that pushes the dough out)---I too love using scoops for muffins, whether it's blueberry or zucchini egg. Thank you for being here! The cornbread with organic heirloom corn sounds really neat! That's great that you're interested in einkorn, you should definitely give these cookies a try! My cookie scoop actually doesn't have the size on it, but I did find the size from where we ordered it =) The scoop I used is 2inch, 2.6Tbsp 1.4oz. I hope that was what you were looking for!
