IMPORTANT PRECAUTIONS/SUGGESTIONS: If the fermentation process takes place correctly, the homemade wine will be great and have a good enough shelf life. But sometimes, since most home brewers are not professionals, the fermentation may remain incomplete and continue even after bottling and storage. Meaning there could be a build-up of carbon dioxide inside the wine bottles. So, 3 precautions to take to be on the safe side: 1.) Don't fill the wine bottles above the shoulder, so that there is enough space above the level of the wine. 2.) For the first week in the fridge, keep the cap of the bottles slightly loose. Don't screw them on tight. 3.) Try to finish the wine in 3 to 4 weeks as we're not adding any preservatives to it. If not stored properly it has the risk of going bad. 4) The wine will keep settling and getting clearer even in the fridge. The longer you store the wine, the greater the sediment that could settle at the bottom. So after 2 weeks or so, you could siphon it or carefully transfer it to another bottle and discard the sediment at the bottom. This is an optional step.

I appreciate your step by step details. Nice recipe will try your recipe. I boil the ingredients with Kashmiri chillies, strain when Luke warm, add yeast and lemon juice and keep for fermentation. I make a big batch, accidentally one remained in the cupboard, lasts for upto 5 yrs.

But for safety sake, I suggest consuming home made wine within a couple of weeks or so, because if the fermentation didn't take place properly during the fermentation period, and continues even after storage then there could be a build up of carbon dioxide gas inside the bottle, and this could lead to an accident.

Thanks for your appreciation. But no need to be concerned about the methanol. A very tiny amount of methanol, around 0.01% is produced naturally during the fermentation of wine. Such a tiny amount is not toxic.

Valerie, you shouldn't add any extra sugar now after the wine has already started fermenting. Any adjustment for taste needs to be done before adding the yeast. For me, the sweetness is perfect. But if your family wants a sweeter wine, I suggest you make some sugar syrup and cool it. And then add a few teaspoons of it to each glass before pouring out the wine. Don't be alarmed if the wine starts giving off gas bubbles. That would be the chemical reaction kicking in because of the late addition of sugar.

And also the traditional Christmas cake.. We siblings and cousins had to do the ckeaning and chopping of all the dry ingredients like cadju sultana raisins rmetc.. etc.. @@joan66joshua Joan, ginger wine remains cloudy even if you let it stand and settle for a month. But if you want the wine to be clear, you could do what they call 'fining'. A natural ingredient you could use for this ( instead of chemicals) is egg white. For this quantity, mix 1 tsp egg white with 2 tsp of water and stir it into the wine after the 7-day fermentation when you have to leave it to settle. But it would need at least 3 weeks for the egg white to pull most of the suspended substances down and form a sediment at the bottom and the wine much clearer than at the start.

So yes, though I haven't measured the specific gravity, I'm making a guess based on research I did regarding wines made by others who've posted the ABV after a shorter fermentation period.
