RECIPE
Ingredients
• 120g cup white and black mustard seeds
• 40ml of unpasteurized apple cider vinegar
• 40 ml of natural unpasteurized wine vinegar
• 20 ml of water
• 5 tbsp raw honey
• 1 heaping tbsp of salt
• 2 cloves of garlic
• 1 tsp ground ginger or root
• 1 tsp ground turmeric or root
• ½ tsp black pepper
• Orange or lemon zest
• EVOO
Necessary household items:
• Bowl
• Clip closure jar
• Blender
• Scale
Elaboration:
1. Wash and hydrate the mustard seeds with water and a little vinegar for a minimum of 24 and a maximum of 48 hours.

2. Cut or grate the garlic.
3. Add the hydrated seeds and the rest of the ingredients except the EVOO to the blender.
4. Mix and beat until you get the texture you like best for the mustard sauce.
It can be with pieces or a more homogeneous sauce. Whatever you prefer,
5. Fill the jar up to 80% of its capacity and add EVOO.
6. Close the jar and leave it to ferment for between 15 and 21 days in a quiet place, without direct light and with a stable temperature.

7. Open the jar and put it in the refrigerator so that it stays there for a long time.
