For fermentation you don't have to keep in fridge. After the fermentation the remaining batter you can keep in fridge and can use it for next meal.

Traditional dosas are actually thick like pancakes only. In South Indian homes we make like what she made here. The thin, paper like dosas are restaurant concept and mostly a North Indian thing. Actual dosas are meant to be think and not thin. Just like the once you see in my profile picture 😊
