Great job making ducana one of 🇦🇬 national dish. There we wrap in banana leaf or seaside grape leaves. I always line the foil with saran wrap here in the 🇺🇸, use brown sugar, add cinnamon, nutmeg.

We use a leaf call chainy bush in Montserrat....but I dont remember putting in black pepper and ginger..we flavour it with vanilla or almond.... essence..but good video

I was so happy to come across this video. I used to make it with my gran years ago. She used to put small chunks of potato/coconut instead of raisins. Was so pleased to find this video for the reminder cause plan on making it soon. Keep up the good work

Once you give them enough time to cook... and when u first take them out of the water .. they might feel a bit soft and then firm up .... but also you need to make sure that the correct sweet potatoes are used

Which sweet potato, I had to use the orange one bc I couldn’t find the other kind that allowed the ducana to change color, you used? From the Virgin Islands and live on the mainland in a back water ass state and can barely find friggin provisions!

in america you ask for batata. the call all the sweet potato yam but they arent all called yam. this is my favorite dish but its very labor intensive. if you cant get your hands on banana leaves use foil paper or use corn husk.

Did you use a blender to grate your sweet potato and coconut? I used a blender and that's where i think I'm messing this recipe up because i have to add liquid to the blending process. I blend them with coconut milk but then i had to add more flour.

I grated it by hand on a box grater... try to avoid blending it. It’s better to grate by hand or get a food processor with a grater attachment
