The easiest way to cook claypot chicken rice(鸡肉煲仔饭) is in the rice cooker. The prep time is fast 10min of rinsing rice, mixing the marinade for chicken, pouring sauces, slicing mushroom, prepping veggies. Then let the rice cooker do its thing for about 45 minutes for your easy, tasty, fuss free one pot meal to complete. You will not have that desirable crust using a rice cooker. The taste is totally Awesome and the convenience of not having to burn yourself over charcoal fire & trying to figure out where to buy a claypot(沙煲) is totally worth it! Since I don’t own a clay pot, the best way to replicate this dish easily at home is to follow my technique on how to make bao zai fan with a rice cooker!
你有听过关于煲仔饭的笑话吗?这是广东话谐音哏,说:"煲仔饭是广东最残忍的美食,因为[煲仔][煮儿子]饭"。我最爱的一款煲仔饭是冬菇腊肠鸡肉饭。传统的做法需要用砂煲烹煮。可是一般家里没有砂煲怎么办?没关系,我试过用电饭锅做煲仔饭也是可以的呦,而且它绝对是懒人和做菜新手的福利,不用大炒,不用看火,只用一个电饭煲就能出一顿饭,有饭有肉有菜。有兴趣的话大家一起来做这道简易版电饭煲冬菇腊肠鸡腿饭吧。
The easiest fuss free way to cook claypot chicken rice in rice cooker. (电饭锅鸡肉腊肠冬菇煲仔饭)
Ingredients:
Rice 2 cups
Chicken Thighs (boneless) 2
Dry Shitake Mushroom 4 pcs
Lap Cheong (Chinese Sausage) 2 pcs
Yu Choy Sum (Any Green Veggies) 1 small bunch
材料:
米 2杯
鸡大腿(去骨) 2个
干香菇 4粒
腊肠 2条
油菜心(任何绿色蔬菜) 1小束
Marinade Sauce Ingredients:
Cornstarch 1 tsp
Pepper 1 tsp
Garlic Powder 1 tsp
Sugar 1 tsp
Oyster Sauce 1 tsp
Rice Wine 1 tsp
Dark Soy Sauce 1 tsp
Sesame Oil 1 tsp
腌汁配料:
玉米淀粉 1茶匙
胡椒粉 1茶匙
蒜粉 1茶匙
糖 1茶匙
蚝油 1茶匙
米酒 1茶匙
老抽 1茶匙
麻油 1茶匙
Instructions:
1. Soak the dry mushroom with warm water, once the mushroom turns soft, separate the mushroom & liquid. Use a fine strainer to filter the mushroom liquid, set it aside.
2. Take a bowl, add all marinade sauce ingredients(1 teaspoon of each) together, mix well.
3. Put the boneless chicken thighs into the bowl to soaking the sauce evenly for 15-20 minutes.
4. Use baking paper to wrap the Yu Choy Sum (Any Green Leaf Veggies) into a bag shape, set it aside.
5. Take a pack of Lap Cheong, open/remove all seal packaging, set it aside.
6. Scoop 2 cups of rice into rice pot, rinse with water & drain out.
7. Put the shitake mushroom & lap cheong into the rice pot, then put the marinated chicken thighs on top of the mushroom & lap cheong.
8. Pour the shitake mushroom water into the rice pot until water level 2.
9. Place the rice pot into the rice cooker & press the START button.
10. At the last 5 minutes remaining, put the veggie bag into the rice cooker, then wait & enjoy!
料理步骤:
1. 将干香菇用温水浸泡,待香菇变软后,将香菇和液体分开。 用细滤网过滤蘑菇液,放一旁备用。
2. 取一个碗,加入所有腌料(各1茶匙),拌匀。
3. 将去骨的鸡大腿放入碗中,让酱汁均匀浸泡15-20分钟。
4. 用烘焙纸将油菜心包成袋子形状,放一旁备用。
5. 取出腊肠2条,放一旁备用。
6. 舀2杯米入饭锅中,用水冲洗干净并沥干。
7. 将香菇和腊肠放入饭锅中,然后将腌制好的鸡腿放在香菇腊肠上。
8. 把入香菇水倒入饭锅至水位2。
9. 将电饭锅放入电饭煲中,按开始键。
10. 剩下最后5分钟时,将蔬菜袋放入电饭锅中,然后等待享用吧!
