How to make Easy Chicken Quesadilla - Serves 2
Ingredients:
1/2 red capsicum, diced
1 small onion, diced
1/4 tsp cumin
1/4 tsp chilli pepper
dash of salt and pepper
2 tortilla wraps
Mayonnaise/ Aioli
1/2 cup sliced roasted chicken
1/2 cup grated cheddar
1/2 cup grated mozzarella
Baking paper
Directions:
1) Place diced onion and capsicum in a bowl.
2) Add in cumin, chilli pepper, salt and pepper. Mix well and set aside.
3) Place the tortilla wrap on a baking paper and spread with mayonnaise/ aioli.
4) Add in 1/4 cup of the sliced roasted chicken on half portion of the wrap.
5) Add in half of the capsicum and onion mix.
6) Sprinkle with 1/4 cup of cheddar and 1/4 cup of mozzarella.
7) Fold in half and wrap with baking paper.
8) Place it on the pre-heated toaster and toast for about 3-5 minutes. Serve and enjoy!
Note: You can also saute the capsicum and onion mix for about 2-3 minutes before adding it in the wrap.
